Indian kitchens have always been the epicentres of ingenious culinary creations, where the art of making something out of nothing reigns supreme. In fact, each state, region, and community boasts its unique leftover-based recipes, nearly all of which are born from resourcefulness. However, as urbanisation leads to more and more people moving away from their homes and into cities, these culinary gems often fade away, especially for those living alone and relying heavily on takeout.

But the tides seem to be turning, there has been an increasing interest in cooking at home with the rising popularity of recipe and food content both online and on TV. Technology, like smart cooking devices powered by AI, is playing a pivotal role in this transformation. These appliances have breathed new life into leftovers, generating step-by-step recipes, and allowing owners to craft gourmet-worthy dishes from the remnants in their fridges.

According to upliance.ai food trends report, which has findings from an extensive dataset of 3000 households and more than 15,000+ cooking sessions on the delishUp across 11 cities, the resurgence of crafting meals from leftovers, is an unmistakable trend.  Additionally, the survey also found that people are using AI to create innovative dishes like Pepsi Chicken and finding new ways to eat their old favourites like Tambuli. Overall, the kitchen has just become a safer place for culinary experimentation.

Rotli Nu Shak: “Rotli Nu Shaak” is a delightful Gujarati dish that ingeniously transforms leftover roti into a flavorful curry or stir-fry. The dish typically involves tearing the roti into bite-sized pieces and cooking it with spices, vegetables, and dal.

Fried Rice: Made from leftover rice is a popular and versatile dish in many Asian cuisines. It involves stir-frying cooked rice with various ingredients such as vegetables, meat, seafood, and seasonings. The key is using precooked, preferably day-old, rice, which has had a chance to dry out slightly. Asian-style fried rice can be made easily with a smart cooking assistant – mincing ginger and garlic with only a tap and turning on Wok mode to toss and fry the vegetables and rice.

Idli Upma:  South Indian cuisines include several recipes to use up leftover rice, dals and even vegetables. For this recipe, crumbled or diced idlis are tossed with a simple tadka. The key is to get the tempering right for the whole spices like mustard and cumin and not burn the chillies and onions. Smart cooking assistants offer presets for most complex cooking instructions and ensure that meals are cooked consistently well.

Kheer: This is another classic Indian dessert that can be made from leftover rice. It involves simmering cooked rice in sweetened milk and adding flavourings like cardamom, saffron, and garnishes such as nuts and raisins. Traditionally, this recipe requires constant monitoring and stirring to get the consistency right. But today, people rely on their cooking appliances to do the tedious steps while they carry on with their day.

Households across India are eager to experiment with a wider variety of dishes right in their own kitchens. This shift is significantly influenced by the convenience offered by AI-powered devices and smart cooking assistants. It’s not just about saving food; it’s a transformative shift in the way people approach home cooking in India. Here are some delicious and simple recipes from Voltas Beko that you can attempt with your siblings.

HOMEMADE PIZZA BAGELS

A fun twist on pizza that’s easy to make and customizable to everyone’s taste.

Ingredients:

4 bagels

1/2 cup of pizza sauce

1 cup of shredded mozzarella cheese

Your favourite pizza toppings (such as pepperoni, mushrooms, or bell peppers)

Method:

Preheat the oven to 375 degree F.

Slice the bagels in half and place them on a baking sheet.

Spread pizza sauce on each bagel in half.

Sprinkle shredded mozzarella cheese on top of the sauce and add your favourite pizza toppings.

Bake for 10-12 minutes in a microwave, its auto-cook program enables you to get your favourite recipes ready at the touch of a button.

Remove the pizza bagel and see if the cheese has melted properly. Cut into small pieces and serve.

HOMEMADE SUSHI ROLLS

Roll up your sleeves and embark on a fun culinary adventure with your siblings as you create your own sushi rolls with unique fillings and flavour combinations.

Ingredients:

2 cups sushi rice

2 cups water

1/4 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

Nori sheets

Assorted fillings (avocado, cucumber, smoked salmon, crab meat, etc.)

Soy sauce

Wasabi

Pickled ginger (optional)

Method:

Rinse the sushi rice in cold water until the water runs clear. Drain the rice and cook it at a high degree for 7-10 minutes in microwave. In a small saucepan, combine the rice vinegar, sugar, and salt.

Once the rice is cooked, transfer it to a large bowl and add the vinegar mixture. Use a wooden spoon or spatula to gently mix the rice until it is evenly coated. Let the rice cool to room temperature.

Lay a sheet of nori shiny-side down on a sushi mat or a clean kitchen towel. Use wet hands to spread a thin layer of rice on top of the nori, leaving a 1-inch border at the top.

Add your desired fillings in a horizontal line in the middle of the rice.

Use the mat or towel to tightly roll the sushi away from you, using the border at the top to seal the roll.

Repeat with the remaining nori sheets and filling ingredients.

Use a sharp knife to slice the sushi rolls into bite-sized pieces.

Serve with soy sauce, wasabi, and pickled ginger if desired. Enjoy!

CHOCOLATE CHIP COOKIES

Get your sweet tooth fix and bond with your siblings while baking delicious chocolate chip cookies.

Ingredients:

100 grams unsalted butter – softened

1/4 cup tightly packed brown sugar – 50 grams

1/4 cup raw sugar – 50 grams, can use castor sugar or finely granulated white sugar

1 teaspoon vanilla extract or 1/2 teaspoon vanilla essence

1/4 cup whole milk

1.25 cups whole wheat flour – 150 grams

1 teaspoon baking powder

1/8 teaspoon salt

1/2 cup semisweet chocolate chips – 80 grams, can add milk, bittersweet, dark, or white chocolate chips

Method:

In a mixing bowl take unsalted butter, brown sugar, raw sugar, vanilla extract, and milk. Grease a baking tray or line it with parchment paper.

Begin to mix and whip the ingredients till the butter becomes nicely soft and fluffy.

Place a sieve on top of the bowl. Add whole wheat flour, baking powder, and a teaspoon of salt into the sieve. Make sure that the bottom of the sieve does not touch the whipped butter. You can also sift the flour separately.

With a spatula, gently begin to fold the sifted flour into the whipped butter, fold well and add chocolate chips.

Cover and refrigerate the dough for 15 to 20 minutes.

Take a portion of the dough and lightly roll or flatten it on a tray or use a cookie press or scoop a tablespoon from the dough.

Preheat your microwave at 190 degrees Celsius for 20 minutes, it comes with a digital display that will help you check if the cookies are baked properly.

Using a spatula, remove the cookies from the tray and place them on a wired rack. Let the cookies cool completely before storing or serving.

DIY POPSICLES

Beat the heat and spark your creativity by making your own icy treats with unique flavours, shapes, and colours.

Ingredients:

2 cups of fresh fruit (such as strawberries, mangoes, and grapes)

1 cup of water

1/4 cup of sugar

Popsicle molds

Method:

Firstly, in a blender take mango, 2-3 tbsp sugar, and 1 cup water, and blend to smooth mango juice.

In a popsicle mould, place a few strawberries and grapes slices. Pour the mango juice into the mold.

Cover and freeze in a refrigerator for 8 hours or until it sets completely. The cooling technology will ensure that the fruits in your popsicle remain fresh and intact by maintaining the correct temperature and humidity levels.

Finally, unmould the mango popsicle and enjoy.

Ideal cooking plans for Valentine’s Day evening

You’ve probably already thought about your Valentine’s Day dinner plans, whether this is the first Valentine’s Day you’ve spent with your partner or the tenth. Whether you’ve spent the entire day together or have just returned from an evening date, you’ll be hungry by the time the sun sets.

These dishes are ideal for a romantic date night or for a wonderful way to conclude the evening. Cooking together is a really enjoyable way to pass the time. Here are some recipes curated by Swapnadeep Mukherjee, Executive Chef, The Metropolitan Hotel and Spa.

CHOCOLATE HEART PEANUT BUTTER COOKIE

Ingredients

Unsalted butter

Granulated sugar

Packed brown sugar, light or dark

Peanut butter

Large egg

All-purpose flour

Baking soda

Baking powder

Kosher salt (don’t use if using salted butter)

Dark chocolate

Method:

Make the cookie dough:

Take a bowl, mix peanut butter and egg, beat unsalted butter until creamy for 2 minutes, add brown sugar and white sugar, beat for another 2 minutes. Pour this mixture in the bowl and mix well.

In another bowl, vigorously whisk flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.

Wrap dough in plastic and refrigerate for at least 3 hours.

Reheat the oven to 375°F (190°C).

Shape the cookies

Shape the dough into 1 1/4 inch balls. Place the balls of dough about 3 inches apart on ungreased cookie sheets (unlined sheets are fine, though you can use parchment paper to line them, if you like). Flatten in a crisscross pattern with a fork (It helps to dip the fork in sugar to keep it from sticking to the dough)

Bake the cookies:

Bake one sheet at a time on the centre rack at 375°F (190°C) until light brown for 9 to 11 minutes.

Remove the cookies from the oven and let them cool in their baking sheets for a minute.

After 1 minute, transfer the cookies to a rack to cool completely.

Melt dark chocolate, pour it in a heart shaped mould and keep it in cool area.

When cookies are baked, put heart shape chocolate on top and enjoy the crunchy

chocolaty taste.

CHOCOLATE PIZZA

Ingredients:

Refined flour

Milk

Yeast

Sugar

Salt

Oil

Water

Chocolate-hazelnut spread (such as Nutella)

Chopped or semisweet chocolate

Chopped high-quality white chocolate

Chopped toasted almond

Method:

Preheat oven to 250′ c. Roll out dough on lightly floured surface. Take a heart shaped pizza base cutter to give it a heart shape. Transfer dough to prepared sheet. Make indentations all over dough with fingertips. Bake until golden, for 20 minutes.

Pour chocolate-hazelnut spread over hot crust, level it. Sprinkle chopped chocolate and white chocolate over. Bake until chocolate begins to melt for 2 minutes. Sprinkle chopped almond, cut into wedges, and serve.

PANEER DILNAAZ

Ingredients

Onion Finely Chopped

Tomatoes

Whole Cashews

Butter/Oil

Green Chillies

Bay Leaf

Kashmiri Red Chilli Powder

Coriander Powder

Turmeric Powder

Water as required

200 grams Paneer

Method

Add bit water to diced tomatoes, ginger garlic paste and cashews. Once the mixture is cooled completely, blend it into smooth paste. Set aside.

In a non-stick pan, heat butter/oil. Add dried bay leaf and fry for ten second. Add finely chopped onions and fry until translucent. Pour ground tomato, cashew paste in it and fry for 3-4 minutes.

Add some water if required and add all the masala powders-kashmiri red chilli powder, garam masala powder, coriander powder, cumin powder and turmeric powder. Add some water if the gravy is too thick. Add slit green chillies and salt. Cook for another 3-4 minutes.

Add Kasoori methi and fresh cream. Mix well. Cut paneer into thin slices and using a heart shaped cutter cut out the hearts and grate some of the paneer too. Add heart shaped Paneer pieces and mix well

Serve hot with Kulchas/Rotis/Phulkas/Naan.

WAKAO FOODS AMERICAN HERBS SAUSAGE – HOT DOG

Ingredients- Hotdog buns, Wakao Sausages, Lime-cilantro Mayo, Sweetcorn, Chopped onion and tomatoes for corn salsa.

Method- Corn salsa

Mix sweet corn, chopped onion and chopped tomatoes with some lime juice and red chili powder.

Pan fry the sausages until cooked from all sides.

Slit the buns and place the sausages in them. Add some corn salsa on both sides of the

sausages

THE BETTER FLOUR – BAKED NACHOS

Ingredients

The Better Flour Robust Red Flour Blend

Cheese

Milk

Jalapenos

Sour cream

Avocado

Salt

Pepper

Method

Knead the dough with a Robust red flour blend and warm water

Roll the dough into chapatis and cut triangles

Preheat the oven to 180c temperature for 10 minutes

Brush them with oil or ghee

Bake the chips at 180c for 20 minutes until the edges start to brown

Prick it with a fork at regular intervals

For the cheese sauce:

Heat the milk and keep stirring in cheese till a the thick sauce is achieved

In a plate or a bowl layer the chips, cheese sauce and jalapenos slices

Garnish with sour cream and mashed avocados.

Serve



MEISTURWURST PORK-BAVARIAN MEATLOAF WITH CREAMY BUTTER-GARLIC CHEESY SPINACH AND MUSHROOM SAUCE

Ingredients:

6-8 slices Meisterwurst Pork Bavarian Meatloaf-1″thick

600 g whole Button Mushrooms-OR Portobello Mushrooms-thickly sliced-peeled, washed &

dried on paper towel

4-6 cloves Garlic-finely minced

1 medium Onion- finely chopped

3 cups whole Baby Spinach Leaves-washed

150-200 g Sun Dried Tomatoes in Oil-set aside 1 tbsp of the oil for use in

cooking-available in most supermarkets in cans/jars

¾ cup Fresh Parmesan Cheese-grated

2-3 tbsp Salted Butter

½ cup White Wine-any local one will suffice

1½ cup rich OR light Cream

1 tbsp Dried Mixed Italian Herbs-Oregano, Rosemary, Thyme, Basil and parsley

1 tbsp Fresh parsley-chopped

1 tsp Corn starch-Optional

1 FOR THE PORK BAVARIAN MEATLOAF

Instructions:

On medium heat, melt the butter in a skillet/wok & lightly saute the onions & garlic for about 1 min or until nicely fragrant

Add the sundried tomatoes and its oil to the butter & cook for about 2 minutes, releasing the flavours.

Now add in the whole Button Mushrooms or sliced Portobello Mushrooms and cook for 5-6 ins

Add the white wine and let the mixture reduce to half its consistency-all the while scraping any sticky bits at the bottom of the skillet

Reducing the flame to low, now you can add in the cream-simmering while stirring occasionally

Season with the salt and pepper to taste

While this simmers, add to the mix the spinach leaves, letting it wilt just sufficiently before adding the Parmesan Cheese

Allow the sauce to simmer another 1 min while the cheese melts through & the sauce thickens-if you wish to have a thicker consistency, add a milk/cornstarch mix and stir till you reach the thickness you want

Add in the herbs to the reduced and almost ready sauce-give a stir and remove from heat

Garnish with a sprinkle of Freshly chopped Parsley

Serve over sides of Creamy Smashed Potatoes/Cauliflower and Steamed String

Beans/Carrots/Broccoli/Peas or even a Vegetable and Herb Rice
