Ring in the New Year with Cordon Bleu Chicken Pops – A Party Delight

CORDON BLEU CHICKEN POPS

Cordon Bleu Pops are crumb fried spiced chicken mince dumplings filled with molten cheese. They are crunchy, tender, oozy, more like little bites of heaven and make for a perfect party food.

Ingredients:

Chicken mince : 200 g

Onion, finely chopped – 1 tbsp

Garlic, finely chopped – 1 tsp

Celery, finely chopped – 1 tbsp

Parsley, finely chopped – 1 tsp

Butter: 30 g

Mixed Herbs : 1 pinch

Salt : To taste

White pepper powder : 1tsp

Potato, mashed : 50 g

Cheddar cheese, grated : 25 g

Mozzarella cheese, grated : 25 g

Egg, beaten : 2 nos

Refined flour : 50 g

Bread crumbs : 100 g

Method:

Cooking the chicken:

Heat up a non-stick pan and melt the butter.

Add the chopped onion, garlic and celery and sauté till translucent. Add mixed herbs and white pepper powder.

Now add the minced chicken and cook till the mixture is almost dry with very little moisture content. Make sure the chicken mince is all separated and does not have any lumps.

Allow the mixture to cool down and then add the potato mash and mix well.

Preparing the cheese filling:

Mix together both grated cheeses, parsley and just enough salt to make a thick cheese mixture.

Assembling the dish:

With the chilled chicken mince mixture, make small dumplings of 15 g each. With the cheese mixture, make smaller dumplings of 1/4th the size of chicken dumplings.

Take the chicken dumplings in hand and slightly flatten them. Place the cheese dumplings in the centre of the flattened chicken mixture and reshape back to a ball with cheese completely covered inside.

Break 2 eggs and beat them in a bowl.

Take 50 g of flour in another bowl.

Place the breadcrumbs in the third bowl.

Dust the cheese filled dumplings with flour and then drop them into the egg mixture and then evenly coat them with breadcrumbs.

Keep the breaded chicken pops in a refrigerator and let them chill for some time.

Heat up a saucepan and add oil just enough to immerse couple of dumplings.

When the oil is hot, slide the breaded chicken balls into the oil and allow to fry to a golden brown.

Strain them from oil to a butter paper.

Serve along with your favourite sauce.

MUTTON SEEKH KEBAB

Seasoned and spiced mutton mince wrapped around metal skewers and cooked on charcoal fire. The heat and smoke of the charcoal give the seekhs a very earthy and smoky note.

Ingredients:

Mutton boneless: 500 gms

Mutton fat: 25 gms

Egg whole: 1 nos

Besan flour: 50 gms

Onion chop: 100 gms

Cashew nuts: 50 gms (soaked in water)

Ginger chop: 2 tbsp

Garlic chop: 2 tbsp

Green chilly: 2 tbsp

Kashmiri red chilli powder: 2 tsp

Garam masala powder: 2 tsp

Coriander powder: 1/5 tsp

Dry mango powder:1/5 tsp

Jeera powder: 1 tsp

Black cardomum powder: 1 tsp

Cinnamom powder:1 tsp

Black pepper powder: 1 tsp

Coriander leaves: 3 tbsp

Salt: 2 tbsp

Method:

Mince the mutton with all the ingredients except egg and besan flour to a fine mince. To this mince mixture, add beaten eggs and besan flour and mix well.

Take a metal skewer and with one’s wet hands take a handful of mince and press and spread it around the metal skewer.

Heat up a charcoal grill and place the skewers of meat above the hot charcoal and turn sides and cook around. Apply some ghee while the seekhs are getting cooked.

Once cooked, loosen the ends of the cooked seekhs and slide the seekhs out of the metal skewers.

Cut into bite size pieces and serve along with mint chutney and onion salad.

PEEL & EAT GARLIC PRAWNS

One of the simplest recipes to make in a jiffy. Whole prawns with shell is pan sauteed with garlic, olives and parsley. One of the easiest recipes to make this prawn preparation with garlic, olives,s chili flakes and parsley makes it very exotic, and the addition of white wine lifts the dish to a different level. The quick cooking retains all the goodness and flavour of the prawns. The outside shell turns a beautiful orangish red, and that’s quite a visual treat. This PEEL & EAT PRAWNS becomes a fun activity by itself along with good company and conversation.

Ingredients:

Prawn with shell: 250 gm

Olive oil (pomace): 30 ml

Prawns (head removed and shell cut open and inside intestine removed): 250 gm

Garlic slice: 10 cloves

Chilli flakes: 1 tsp

Olive slices: 5 black & 5 green olives

White wine: 50 ml

Parsley: 2 tbsp

Salt: 1 tsp

Butter: 20 gm

Lemon wedges: 4 nos

Ingredients for butter sauce:

Butter(salted): 50 gm

Lemon juice: half a lemon

Parsley chop: 2 pinches

Soften the butter and mix the lemon juice and parsley to form a soft butter dip.

Method:

Detach and remove the prawn heads and discard. With a sharp knife slit open the top or hump side of the prawn along with the shell. Slightly open the slit portion and remove the veins in running water.

Heat up a non-stick saucepan. Add olive oil and sliced garlic and saute to golden. To this, add the chili flakes. Drop the cleaned prawns into this hot pan and toss. Add the white wine, olive slices and salt. Toss till the white wine is evaporated. Add the chopped parsley,lemon wedges and butter and toss again. Don’t allow the butter to burn but just coat the prawns which gives them a buttery and silky coating.

Transfer to a serving dish and garnish with some chopped parsley. Serve along with the butter lemon dip.

Abu Dhabi announces lorry and worker-bus ban on New Year’s Eve

Exemptions from the ban include vehicles from public cleaning companies and logistical support,” added the Traffic and Patrols Directorate…reports Asian Lite News

Trucks, heavy vehicles and buses transporting labourers will be banned from Abu Dhabi roads on New Year’s Eve, the Traffic and Patrols Directorate of the Abu Dhabi Police, in cooperation with the Integrated Transport Centre, announced.

“This includes Sheikh Zayed Bridge, Sheikh Khalifa Bridge, Mussafah Bridge and Al Maqtaa Bridge,” the Traffic and Patrols Directorate of the Abu Dhabi Police added, noting that the ban will be implemented from 7 am on Sunday, December 31, 2023, until 7 am on Monday, January 1, 2024.

“Exemptions from the ban include vehicles from public cleaning companies and logistical support,” added the Traffic and Patrols Directorate.

“Traffic patrols would be deployed across all roads and traffic surveillance would be intensified through smart systems in order to ensure traffic flow,” noted the Directorate. (ANI/WAM)

Yummiez Extravaganza For New Year

With Christmas and New Year eve being just around the corner. Here are some special recipes curated for the festive season.

Chicken Sausages Skewers by Chef Rakhee Vaswani

Ingredients:

•             8-10 Godrej Yummiez Chicken Sausages

•             Wooden skewers

•             1/2 cup all-purpose flour (AP flour)

•             1 teaspoon paprika

•             1 egg

•             1 tablespoon sugar

•             1/2 teaspoon salt

•             1 teaspoon baking powder

•             Water/milk (enough to make a thin batter)

•             Vegetable oil for deep frying

•             Ketchup and mustard (optional, for serving)

Instructions:

•             Thaw the Godrej Yummiez Chicken Sausages if frozen and pat dry.

•             Thread the sausages onto wooden skewers.

•             In a bowl, whisk together the flour, paprika, egg, sugar, salt, and baking powder. Gradually add water or milk until you have a thin batter.

•             Heat vegetable oil in a deep fryer or pot over medium-high heat.

•             Dip the skewered sausages in the batter, coating them evenly.

•             Deep fry the sausages for 2-3 minutes, or until golden brown and cooked through.

•             Drain on paper towels.

•             Serve hot with a drizzle of ketchup and mustard, if desired.

Crispy potato Starz by Chef Harpal Singh Sokhi

Ingredients:

•             Godrej Potato Starz 1 packet

•             Oil for deep fry

•             Chilli flakes for seasoning

•             Mix herbs for seasoning

•             Chesses sauce ½ cup

•             Godrej Potato Starz 1 packet

Instructions:

•             Heat oil in a kadai.

•             Deep fry the Godrej potato Starz until becomes golden.

•             Remove the fried golden potato starz on tissue pepper and let it absorb.

•             We can serve in three different ways.

•             First serve Godrej Crispy Potato Starz as it is.

•             Second deep in cheese sauce and serve.

•             Finally add more flavor with chilli flakes and mix herbs followed by cheese sauce on Godrej Crispy Potato Starz.

Cheesy Smashed Potato Bites by Chef Vicky Ratnani

Ingredients:

•             Godrej Yummiez Potato Cheese Bites

•             Salted butter

•             Garlic – minced

•             Red chilli flakes

•             Coriander

•             Grated cheese – optional

•             Lemon

•             Salt and pepper

Instructions:

•             Deep fry Godrej Yummiez Potato Cheese Bites till golden. Drain excess oil using paper towels

•             Using the bottom of a glass or the flat of a knife, gentle smash the crisp fried individual Yummiez Potato Cheese Bites

•             In a pan, take butter with minced garlic, chilli flakes and lemon juice and cook till well-combined

•             Using a brush, brush the compound butter mix on the crisp potato bites

•             Serve with a sprinkle of chopped coriander

Pita Pocket Chicken Cheese Nuggets by Chef Ajay Chopra

Ingredients:

•             Yummiez Chicken Cheese Nuggets

•             Pita Bread

•             Beetroot

•             Carrot

•             Onion

•             Green Chillies

•             Garlic cloves

•             Neutral cooking oil

•             Lemon Juice

•             Salt

•             Harissa sauce – optional but highly recommended

Instructions:

For the Toum:

•             To prepare the toum, take 1 cup of whole garlic cloves in a blender.

•             Add 2 tsp salt

•             Add 3 cups of neutral oil and ½ cup lemon juice

•             Blend till creamy and emulsified

•             Store in a cool place till ready for use

For pickled veggies:

•             Cut batons of beetroot and carrot

•             Mix white vinegar and sugar & salt to taste

•             Boil the veggies and whole green chillies in the vinegar mixture till soft

•             Set aside to cool

For the Pita Pocket:

•             Fry Godrej Yummiez Chicken Cheese Nuggets till crisp

•             On a dry pan, lightly toast pita bread and make carefully open it up to reveal a pocket

•             Add a dollop of garlic toum sauce

•             Add the pickled veggies

•             Add the crisp Chicken Cheese nuggets

•             Top with more garlic toum and any hot sauce of your choice. We recommend harissa for authentic flavor.

•             Serve hot

New Year heralds record tech layoffs

The New Year started on a super bad note for tech employees as e-commerce giant Amazon and enterprise-software company Salesforce together announced to lay off more than 25,000 workers, with others joining the ongoing layoff season amid recession fears.

To put this in perspective, tech companies globally sacked 28,096 workers in the January 1-January 5 period, according to layoff tracking website Layoffs.fyi.

In December last year, over 17,000 tech employees were shown the door (holiday season may be one of the reasons for lower numbers).

This shows 2023 may become the worst year in the history of the tech world.

According to Layoffs.fyi which has been tracking job losses since the start of the pandemic, 153,110 workers were let go in 2022, led by companies like Meta, Twitter, Oracle, Nvidia, Snap, Uber, Spotify, Intel and Salesforce, among others.

The number of layoffs reached its nadir in November, which saw 51,489 tech workers lose their jobs.

Approximately 6 per cent of Google employees could be sacked over “not having enough impact,” according to a report by The Information.

Google layoffs in 2023 could see as many as 11,000 employees lose their jobs.

“A new performance management system could help Google managers push out thousands of underperforming employees starting early next year. Managers could also use the ratings to avoid paying them bonuses and stock grants,” according to the report.

Under the new system, managers have been asked to categorise 6 per cent of employees, or roughly 11,000 people, as low performers in terms of their impact for the business.

Alphabet and Google CEO Sundar Pichai aims to make Alphabet 20 per cent more efficient, hinting at job cuts.

Pichai had said the company is “still investing in long-term projects like quantum computing. But it’s important “to be smart, to be frugal, to be scrappy, to be more efficient”.

According to reports that surfaced in October last year, tech giant Microsoft laid off nearly 1,000 employees across multiple divisions of the company.

The cuts occurred across a variety of levels, teams, and parts of the world.

The tech giant declined to say how many jobs had been cut, but reports said the layoffs were under 1,000.

“The next two years are probably going to be the most challenging,” Nadella told CNBCTV18.

“There is a real recession in large parts of the world and so the combination of pull forward and recession means we will have to adjust,” he was quoted as saying in the report.

Meanwhile, for the first time since early 2021, Apple’s market cap fell below $2 trillion during trading last week. The fall meant that in just one year, the tech giant lost $1 trillion in market capitalisation.

Like many other tech companies, Apple has been hit by supply chain issues in China amid the Covid turmoil that affected operations at its main supplier Foxconn’s key facility in the central city of Zhengzhou.

However, Foxconn’s biggest iPhone manufacturing facility is gradually recovering and production has reached about 90 per cent of maximum capacity, according to reports last week.

Apple, however, has not announced or hinted any job cut to date.

All eyes are now on the Big Tech quarterly results that will come out at the end of this month, clearing the air further about which company is set to reduce headcount as recession looms.

When we think about New Year resolutions, losing those extra pounds, reading that book, switching to a healthy diet are some of the few things everyone wants to do. The key is to choose your resolutions wisely and make it happen. At study conducted by researchers at the University of Scranton found that 23 percent of people quit working on their resolution just two weeks into the new year, only 19 percent of resolution setters stick to their goals over the long haul.

Here’s a smart guide to identifying the right resolutions to improve your life, creating a plan on how to reach it, and becoming part of the small group of people that successfully achieve their goal.

Measurable goal

Vague resolutions give no one clarity. A statement like “I want to get healthier,” or “I want to be happier” has more weightage, when it is linked to a number. You can tell yourself; I want to go to the gym three times a week,” or “I want to go for a nature trail twice a month.” This will add tangibility to your goal.

Plan for success

If you decide to eat healthily, create a plan that details out your meals in advance. This way there is no room for cheating on your diet. Think about the obstacles you’re likely to encounter in the first weeks after establishing your resolution. Consider how you’ll navigate these challenges, and develop a plan. Planning ahead for the probable challenges can help you feel equipped to handle the unexpected obstacles that crop up along the way as well.



Self-monitoring

Monitoring your progress is key to creating lasting change. Assessing improvements on a regular basis can be enough to keep you motivated. There are smart self-monitoring tools and products such as MyFitnessPal, that help count calories or FreeStyle Libre that help monitor blood glucose levels. There is a smart wearable that makes your life easy and one should leverage them to their advantage.

Internal motivation

Internal motivation to do something, makes you feel more confident and stronger through the process. You’re not going to hate it so much because you know you’re training for better habits in yourself. One of the biggest reasons pledges fail is because they’re externally motivated as it is defined by how other people react to you.

It is important to stick to a handful of resolutions instead of a list of countless goals. Adapt targets at a realistic pace so that each victory boosts confidence and carries you forward in ticking them off the list.

SPECIAL 2022: West to Face New Russia-China Challenge – By Mihir Bose

In many ways the most intriguing feature of 2022 maybe the way the Russian-Chinese relationship develops and how the west adapts to it. It was the split between them in the 60s that opened the door for America, in particular Richard Nixon, to finally acknowledge that mainland China was communist, a decision which led to major geo political changes and in the long run was one of the factors among many that helped contribute to the fall of the Soviet Union. Now these two powers coming together poses fresh and unexpected challenges for America and the western allies and their response suggests they do not quite know how to measure up to this new alliance.

Of course this alliance is nothing like the one that was forged when Mao marched his army into Beijing and proclaimed the Peoples Republic of China. Then belief in Marxist-Leninism united the two countries. Mao, while believing in his own version of communism, also saw Russia as the mother land of communism from which he could draw inspiration. Stalin, of course, did not care much for Mao. He kept Mao waiting when the Chinese leader came to Moscow after assuming power and even had Mao’s stool examined to try and work out his characteristics. This was not only because Stalin was intensely suspicious but because, contrary to the communist propaganda that was spewed out for years, he was a racist who saw all non-whites as inferior. But they were fellow communists and the hostility of the US to Mao’s China, which it refused to recognise as a legitimate state for 25 years, denying it membership of the United Nations, helped cement the bounds.

All that has, of course, long gone. The present alliance is based on a shrewd appreciation by the two countries that they need to come together if they are realise their objectives and make sure they are not thwarted by the west. They are also coming together when both are in the middle of a dramatic change in their own societies. It may be almost a quarter of a century since Russia renounced communism but Vladmir Putin’s regime continues its march down the authoritarian avenue combining communist and Tsarist Russia elements of state control. It is not without significance that just after Christmas Russia’s Supreme Court ordered the closure of Memorial, the country’s most prominent rights group, which chronicled Stalin-era purges and symbolised the post-Soviet democratisation.

In Putin’s Russia where Stalin is seen as a hero there is no place for those who seek to tell the truth about what happened during those terrible decades. But while Putin may like some of the tools of communism to keep control he is no communist. That is not the case with his new found Chinese friend.

President XI , once a cave-dwelling outcast, who as a fifteen year old had been exiled in 1969 to the once-desolate village of Liangjiahe, in North-West China, has made no secret of the fact that he is a Marxist and a Leninist. He believes in exercising absolute power and in the Chinese communist party controlling practically all areas of Chinese life. And this marks a huge change from the way China has developed since Deng Xiaopong turned China round and laid the foundations for making China the world power it has become.

Deng’s philosophy was based on a very clever strategy of making sure the communist party retrained control, yet the people had as much freedom as possible. In effect what this meant was that in their economic life people were allowed to make money and indeed become very rich capitalists as many of them did in the years that followed. However, control of the state remained in the hands of the communist party. This was the trick that Michael Gorbachev missed. He brought freedom to Russia but in the process had to abandon communism and indeed the Soviet empire having to set free many of the colonies it had. Deng avoided any such thing.

Xi may have been brought up in Deng’s liberal regime but his direction is to move China from the market economy that Deng created to a command economy with the state intervening in the private lives of individuals. So, in order to control the video-games industry children are allowed one hour online only on Fridays, Saturdays and Sundays.

Putin and Xi in a certain sense share a common goal. Putin has made no secret of the fact that he regrets that Gorbachev’s reforms led to the collapse of the Soviet Union and Russia losing control of many countries once part of the Soviet empire. His foreign policy initiatives are clearly designed to re-establish the old Soviet Empire, or at least once again exercise control over countries that he feels belong to the Russian orbit and should never have been allowed to go free.

Xi’s mission is to rejuvenate China and restore the country to a mythical status, one it had until the 18th century, when it was the leading country in the world and people paid homage to the Chinese emperor. Then came its century of shame, as the Chinese put it, humiliation at the hands of the British Empire. If for Putin going back to the lost past means trying to bring Ukraine to heel then for Xi Taiwan and many other parts of south Asia should kowtow to the new China.

For the west all this anathema. But apart from making pious noises there is little it can do. It can only watch as Putin bullies countries bordering Russia. Nor can it do much as China extends its arc far beyond its traditional borders, as far as Sri Lanka. Nor can it do anything to stop China behaving in Africa in the style that the old Europeans, who plundered what they called the dark continent, would have immediately recognised. Indeed, if someone of them were around they would immediately claim that China was following their white exploration play book. As with Putin the west can do nothing about this. It can try and rein in some Chinese companies, but it cannot curb the expansion of the Chinese state both within China and abroad.

All this is not helped by the fact that we have never had such poor leadership in the west. Joe Biden may have beaten Trump, but he has proved such a failure that not only will the Democrats lose the midterm elections due in 2022 but it is very likely he, or whoever the Democrats nominate, will face a resurgent Trump in 2024 and this time suffer a defeat.

Boris Johnson may be a great Greek scholar, but his state craft has never amounted to much. He was, probably, the worst foreign secretary this country has had and in any case much of 2022 will be for him a battle to make sure he holds on to No 10.

I believe he will. The Conservatives are a ruthless political party who have no compunction in removing a leader who looks like losing an election. But I doubt if 2022 will see Boris fall. He can still perform a good pantomime act and that is likely to carry him through for another year. If by then he is still, as Dominic Cummings pictured him, a shopping trolley out of control then it might be a different story.
