The Burrow – BKC

Eat, Drink, Gather. In an upscale venue of BKC, The Burrow is a newly launched Modern European Bar & Kitchen. The restaurant sets itself apart with a pre-plated single-portion menu that introduces an all-day dining concept. Conceptualised and Founded by Chef Yashasvi Modi, along with her father, Anil Modi as the Co-Founder, the doors open to a quaint restaurant, which represents the name with stone walls and wood elements. A burrow that breaks you away from the city noise and offers solitude for a good time over drinks and food.

With an array of modern European dishes, the menu includes but is not limited to old classics of artisanal pasta, gourmet-styled tacos, and sliders among others. Each dish is carefully crafted to make the accompanying sauce/dip the star ingredient. Dip such as in-house Hot Sauce is served with Mozarella Sticks or Chicken Popcorn, both crispy and perfectly seasoned to pair with the dip. Aji Pepper Sauce is served with Birria Pulled Lamb Taco with soft taco shells and slow-cooked lamb shoulder, mozzarella, and Birria Coloccasia Tacos with soft taco shells and crunchy colocasia chips. The mains include dishes such as Grilled Fish, Orange and chilli sauce, Pomme puree which is a signature dish perfected throughout the years consisting of Red Snapper fillets, herb-flavoured orange and chilli sauce, pickled chillies and potato puree or the Spinach and Feta Pierogis, which is a delectable dish inspired by the Pierogis. Chef Yashasvi envisions the Burrow to be a casual place with good, fresh food that, if one chooses, can be eaten every day. And hence to showcase the seasonality of the produce, a weekly Chef’s  Special  Menu will be introduced that will shine a spotlight on the preparations made by individuals in the brigade.

The menu co-curated by the dynamic duo – Chef Dhiraj Dalvi and Chef Talat Fatima is designed to cater to the diverse tastes of its clientele while being consistent with its overall theme. It has been designed by ‘Otherworlds’, a multidisciplinary studio that specialises in creating unique spatial and visual domains in the real world as well as virtual domain. The restaurant has been crafted with intricate attention to detail, envisioned as one extended balcao under an overgrown bamboo canopy. The entire place is woven with a dual tone texture, and is planned to grow out and round the central bar. Manchester restaurateurs sign MoU with Pune catering college

The Maharashtra State Institute of Hotel Management and Catering Technology, Pune signed a MOU with one of the UK’s Manchester based leading Vegan Restaurant – Pune based BhajiPala last week.

Brand BhajiPala is owned in Manchester by partners Devang Gohil and Chef Pradip Nale who had opened their Pune branch at Baner – their first in India last year. BhajiPala is a unique vegan restaurant that offers exclusive Indian vegan food which gives it an edge over other vegan restaurants in the UK and Pune.

BhajiPala has picked up their recipes from traditional Indian food prepared in authentic Indian style and it has managed to attract both the British and the Indian palate. Gohil and Nale also own the popular restaurant Ziya located on the famous Curry Mile in Manchester city that serves authentic Indian street food, vegetarian and non-vegetarian food.

Devang and Pradip informed, “This MOU with Pune College will help the students with enhanced opportunities, visits to the UK and acquiring knowledge of the latest food and beverages trends.”

BhajiPala’s Indian Partner Prasad Gunbote shared that these college students will be given an opportunity to work as apprentices at the Bhaji Pala Pune branch. Thus the engagement will be very active with the college.” On signing of the MoU occasion the final year students of the catering college conceptualized and executed a theme lunch, ‘La Petite Fête’, where Traditional French Cuisine was served with a contemporary touch.

Kaustubh Naik from Retox cocktails, along with Nikhil Prabhu the HR manager and L&D of Novotel Hotels Pune and Mandar Chitale and Radhika Chitale from Shreyas Hotel were present and encouraged the students.

Devang and Pradip also shared that from their Pune branch two chefs have been offered visas and given an opportunity to travel and work in their Manchester based flagship restaurant Ziya thus making the Indo UK business bond stronger.

The partners are part of the business Indian diaspora in the UK, are testimony to the fact that Indo UK relationships are fostered strongly by these builders of the “living bridge” between the two nations.  

Gohil and Nale are on an expansion spree in the UK. They are planning to start a multi cuisine vegan restaurant following the success of Bhaji Pala in Manchester and have under their umbrella hotels to manage in Blackpool. What better way to showcase the diversity of Indian cuisine than through pop-ups? India is known for its diverse culture, appearance, and cuisine. We are all aware of how well-known India’s street food vendors are at this point. Everyone, including office workers and college students, appreciates a food innovation that blows their minds, even if it’s a simplified maggie.

“Food pop-ups in my experience are one of the best things that could happen to the food industry. Many aspirational restaurateurs have the inherent ability to produce Instagram-worthy food but lack the funding and capital required to set up mainstream restaurants and cafes.

“The concept of food pop-ups in tandem with the factor of becoming viral on social media, disrupts the traditional food industry. It also instills and encourages an entrepreneurial spirit in the people, which is crucial to the economy from a micro-perspective.

“Food pop-ups have the added advantage of mobility, which allows them to serve locations strategically, all while acting like a QSR with commendable service time,” says food blogger Vishal Bharadwaj.

Food pop-ups have been shown to be very effective in terms of showcasing creativity and earning, while also creating a fun food idea for visitors, giving new meaning to eating on the streets.

People in the food industry have been extremely vocal about their experiences and according to Maj Dinesh Sharma, Founder, and Director of APCA – Academy of pastry & Culinary Arts, “Pop-up restaurants are a fashionable but powerful force in the food industry. The food industry took on new meaning with the pop-up, Chefs frequently use pop-up restaurants to showcase their culinary skills to a larger audience and potentially attract investors for a future restaurant.”

Maj continues to tell about the concept’s benefits and drawbacks, “The pop-up restaurant could potentially set up shop anywhere it is legal and safe to do so. They’ve been discovered on everything from city building roofs to the insides of barns.

Food blogger Bharadwaj who believes food pop-ups will thrive with the right infrastructure, such as a street cart food court, and basic amenities such as hand washing and nearby seating said, “The food tastes quite different, to be honest. Pop-ups’ main concentration would be towards quantity and pricing it cheap whereas posh restaurants look at quality and plating. The crowd differs and that would be one of the key differences.

“For me, I would surely prefer a food pop-up for some great Indian or Indo-Chinese quick food and go to restaurants for some great Continental food or probably a fine dining experience.”

“Pop-ups are as much a way for consumers to explore their palates with different cultures and styles of cooking, as it is a marketing and an engagement tool.

“Be it moving out and doing a pop-up or having one of my chef or mixologist mate coming over to my restaurants/bars and doing one, there’s always something new for people to explore, thereby also making it a great way to tap into a new audience, all while retaining your patrons. It’s also a great way to enhance your skill set as you get to collaborate with the best and learn a few new tricks from them,” says Chef Tarun Sibal, who recently collaborated for a pop-up with Rooh, Delhi around Gourmet casual.

According to Tarun, Pop-ups have been becoming increasingly popular especially post Covid since they have huge perks for both – the chefs and the diners.

He adds, “They bring freshness to an existing menu while giving guests a unique dining experience. They make restaurants accessible to diners in different geographies and give chefs an opportunity to experiment with their craft.

“Collaboration of chefs and cuisines from different countries, and different cities, diverse thought processes, food philosophies, new techniques, and ingredients are things that are at play when we talk about pop-ups. The guests end up as the winner.”

Indians love dining out

Homely food is precious for Indians, but people always love going out in between to have special dishes. The Indian F&B industry witnessed a major drift from dine-in to delivery business with the pandemic working as a “catalyst” in the growth story. The change in consumer behaviour has driven the rise of Cloud kitchens in India.

But, according Chef Anand Panwar, Executive Pastry Chef, Roseate Hotels & Resorts: “Out of 100 cloud kitchens, only 15-20 per cent may survive, these will be mostly those who have their own restaurant.”

During the lockdown when restaurants were not allowed to operate dine out services, they introduced cloud kitchens or takeaway services. “Eventually, these cloud kitchens will change into their previous kitchen models and still have an edge over the ‘only cloud kitchen’ owners who will find it hard to compete,” he adds.

Panwar says: “Dining out is a multisensory experience. Indians love dining out in addition to ordering food at home. During the pandemic, we ordered home delivery, but in comparison to diners who go out normally it was far less.”

Roseate Hotels and Resorts recently launched Roasted by Roseate — a chic patisserie and tea lounge in Vasant Kunj that “strives to provide that cutting edge design, chic interiors a warm ambiance and serve fresh ingredients used in savories, gateaux, pastries, bakery, and fresh brews”.
