Sustainable, cruelty-free, antibiotic-free, ethically-produced, plant-based veganism that was a niche sector till recently is now gaining worldwide popularity. As distinct from vegetarianism, veganism seeks to avoid the unnecessary disturbing or suffering of all living beings, and is practiced as a diet, lifestyle and fashion alternative with people choosing plant-based products over those made from or mandates testing on animals. Veganism was the minority of another minority class of vegetarians but is now enjoying the spotlight with the move towards conscious living gaining currency during the peak of the Covid-19 pandemic.

Initially, the term vegan was used to describe non-dairy vegetarians, but in 1951 the Vegan Society updated the definition to “exclude all forms of animal exploitation”. The term vegan first surpassed “beef” as a search term in 2016.The global market share of plant-based foods is projected to reach US $10,892 million by the end of 2022 with a CAGR of 6.7%. Thus,”to meat or not to meat?” is a question that begets its own answer when you see non-meat choices as healthier, sustainable, ethical and planet-friendly.

With climate events rocking different geographies at different times, sustainability has gained traction in everyday living choices. Animal agriculture is the second largest contributor to greenhouse gas emissions after fossil fuels. It also leads to deforestation, water and air pollution and biodiversity loss. What’s good for the planet is good for us as well. And in food, cosmetics or fashion labels, one doesn’t really have to look too hard to find conscious living, vegan alternatives that celebrate the idea of harmonious co-existence. What’s more, vegan food spans inspiring, diverse palette of flavours now, and burgers, bakery, and snack fillings can be easily expanded to include vegan alternatives.Recently India’s first D2C Unicorn, Licious made news by foraying into the plant-based meat market with the launch of UnCrave. Veganism has emerged as a million-dollar health industry.Beyond Meat, Oatly, and several other vegan businesses have created a buzz globally.The plant-based meat industry is going to be in $7billion globally this year, and is also giving birth to the flexitarian culture where people choose meats when there is no alternative, but happily make ethical choices when presented with alternatives.

With India facing an epidemic of non-communicable diseases (NCDs) like an increase in incidence of diabetes, cancer, stroke and heart disease, plant-based meats offer healthier alternatives.As per a WHO report, nearly 5.8 million people die from NCDs every year in India, or in other words, 1 in 4 Indians has a risk of dying from an NCD before they reach the age of 70. Ingredients commonly found in plant-based food include legumes, quinoa and vital wheat gluten, better known as seitan, and so vegans don’t miss out on their quota of proteins.

Nearly 42% of the Indian population avoids meats due to religious reasons. According to a UN FAO report, India accounts for the lowest rate of meat consumption globally. There were around 500 million vegetarians in India in 2020. However, only 1% of Hindus are strict vegans, so the total number of vegans in India is approximately five million, but is set to zoom with growing consumer awareness.

Veganism promotes nut-based or soy milk instead of dairy milk. While most infants can digest lactose, many people begin to develop lactose intolerance, a reduced ability to digest lactose, as they age. A study by Sanjay Gandhi Post Graduate Institute of Medical Sciences concluded in 2015 that three out of four Indians are lactose intolerant. Medical experts say that the capacity to digest milk naturally decreases as we age, and vegan milk is thus healthier.

Veganism has thus outstretched the boundaries of vegetarianism, though a complete overhaul of dietary habits is a slow process. Bollywood mega stars like Aamir Khan, Shahid Kapoor, Virat Kohli and Alia Bhatt have been promoting and practicing vegan habits. Ritesh Deshmukh and Genelia D’souza are co-founders of Imagine Meats, a plant-based meat alternative brand. Virat Kohli and Anushka Sharma are now investors and brand ambassadors of the homegrown plant-based meat brand Blue Tribe.

The vegan trend might have initially been a fad, but it’s winning fresh converts who see the obvious advantages of making ethical choices, saving health, biodiversity and the planet.In India, bodies like the Plant Based Food Industry Association (PBFIA) are stressing on the bigger picture of securing a plant-forward future, creating a network within the plant-based ecosystem to connect organisations, food handlers, start-ups, investors and consumers.

In the FMCG sector, in cosmetics, personal care and hygiene, biodegradable cutlery, fashion brands, cleaning and cleansing products, and products for pet care, there are plenty of vegan choices that allow us a guilt-free life. Veganism is at the forefront of the sustainability battle, and the increasing demand for nutrition-dense plant-based solutions. It’s all about living a life of compassion, and healthy choices. It’s a personal choice, but the decision impacts us all. Given its vast array of benefits and the growing interest of consumers, veganism is going to be the next big market opportunity, on a scale similar to that of the IT sector. Determined to save sheep and incentivise clothing designers, PETA US has launched the Vegan Wool Challenge, which will award US $1 million to the first entrant who develops a vegan wool material that’s visually, texturally, and functionally akin or superior to sheep’s wool and is adopted and sold by a major clothing brand. This opportunity is open to applicants worldwide.

“From apples and hemp to kombucha tea and cacti, there seems to be no limit to what designers can use to create wonderful, animal-free clothing and accessories,” says PETA India Manager of Fashion, Media, and Celebrity Projects Monica Chopra. “PETA entities are delighted to offer innovative minds a big boost that will protect sheep, push fashion forward, and help stop the environmental degradation caused by animal agriculture.”

PETA entities have documented cruelty to sheep in 117 wool operations worldwide, revealed in 14 exposes that found that even on farms marketed as “sustainable” and “responsible”, workers beat, stamped on, cut up, and slit the throats of conscious, struggling sheep. While there are many durable, stylish, and warm materials available that aren’t made from animal-derived materials, the creation of a viable, sustainable vegan wool could help abate suffering and fight the climate catastrophe – as the wool industry produces massive amounts of methane, erodes soil, and contaminates waterways.

The tide is turning against animal-derived materials, and people – especially young consumers – now object in droves to supporting industries predicated on animal exploitation and slaughter. A recent survey by Glamour magazine found that approximately 73 per cent of Gen Z identifies as animal rights activists.

VEGAN CAESAR

Pure vegan salad contains of Avocado, cashew nuts, walnut, rice paper crisp, chopped chives, and olive oil with cider vinegar.

Ingredients

Baby romaine (cut into thicker strips) 80 gms

Rice paper sheet 05 gms

Toasted walnut 05 gms

Chopped Chives 02 gms

Avocado Dressing 60 ml

For the Dressing

Pitted avocado 60 gms

Water 125 ml

Raw cashew nuts( soaked overnight) 30 gms

Lemon juice 30 ml

Olive oil 80 ml

Cider vinegar 03 tsp

02 cloves Garlic

To taste add salt and Cracked black pepper

Method

Blend the Avocado, cashew nuts, and garlic in water, and add cider vinegar and olive oil. Season with salt, pepper, and lemon juice. Store in the fridge until use.

Mix the strips of romaine in the dressing and place them in a deep bowl. Garnish with rice crackers, chives, and toasted walnut.

Rinse the quinoa under running water and boil for 10 -15 minutes. Place in the fridge for cooling.

Tofu Tikka Masala – appetizing, delectable, and healthy recipe

Prep Time: 3 hours

Cook TimE: 30 minutes

Ingredients:

2 blocks firm tofu (pressed to remove excess water)

2 tbsp tandoori tikka masala

1 tbsp ginger-garlic paste

2 tbsp oil

1kg tomatoes (roughly chopped)

100 gms cashews

20 gms garlic

30 gms ginger

3 cloves

3 green cardamom

9 black peppercorns

500 ml water

2 onions (finely chopped)

2 tbsp ginger-garlic paste

2 tbsp tandoori tikka masala

Preparation:

Making Marinated Tofu Tikka

Cut tofu pieces into roughly 1-inch squares

To marinate – mix tandoori tikka masala, ginger garlic paste,and oil in a separate bowl and mix well to form a paste of smooth consistency.

Pour the marination over the tofu to coat it well and refrigerate it for 2 hours.

Preheat the oven to 200o C.

Remove the marinated tofu from the refrigerator and put them on metal and wooden skewers.

Take a baking tray and grease the surface well. Place the skewers onto the tray and bake it for 10 to 15 minutes until a charred crust is formed.

Remove the beautifully charred tofu and let it cool down.

Making Tikka Masala Gravy

Add tomatoes, ginger, garlic, cashew, and whole spices to a large pot, cover with water, and place the pot over medium heat.

Bring the pot to a boil and let it simmer till the cashews are completely soft. Once the cashews are entirely soft, remove the pot from the stove and let it cool down. The entire process will take approximately one hour.

Blend it into a smooth puree once the mixture has cooled down. You can add water as needed to make a smooth puree. Be mindful of the whole spices and ensure they are entirelyblended; otherwise, they can be unpleasant to chew on.

Making Tofu Tikka Masala

Heat oil in a pot. Add finely chopped onions and cook till the onions are completely caramelized.

Add ginger garlic paste to the caramelized onions and stir for two minutes till the paste is cooked.

Once the paste is cooked, add tandoori tikka masala, stir for 1-2 minutes, and smell the appetizing aroma of the masala.

Add the blended gravy to the cooked above paste and let it simmer on low heat for 10 to 15 minutes until oil starts leaving the sauce.

If the gravy has thickened, you can add water to the sauceand cook till the water boils. The best way to gauge if yourdressing is cooked is to taste it. If you can still taste the raw spices, let them simmer for more than 5 minutes.

Once the gravy is thoroughly cooked, add the marinated tofu to the sauce and serve the appetizing Tofu Tikka Masala with delicious butter naan and fluffy white basmati rice.

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients:

1 head Cauliflower (cut into large florets)

1 cup Rice flour

1/2 cup Cornstarch

1/2 cup 00 Pizza flour (purchase from Amazon if locally not available)

1 cup water (add more if need be)

Salt and pepper (to taste)

Oil for frying

Bomb Bay seasoning (add as per taste – word of advice – more the better)

Korean BBQ Sauce

Preparation

Boil salted water in a pot, add the cauliflower florets and cook in the water for 5 to 6 minutes. Make sure it does not turn mushy.

Once cauliflower is cooked, transfer it to a tray and place it in the refrigerator until it cools down completely. This makes sure it does not cook further, or it might turn mushy.

For the batter – in a bowl, whisk rice flour, corn starch, 00″ flour, and salt & pepper with water to make a batter. Make sure to whisk all the lumps away. The consistency of the batter should be thick.

Dip the cauliflower in the batter and then into the panko crumbs for the added crunch.

Heat the oil and fry the cauliflower on medium gas till they are golden and crispy.

Sprinkle the wings with Bomb Bay seasoning, drizzle with flavorful Korean BBQ sauce, and serve MEOGGI JEON-e (Korean for BON APPETIT).

Preparation:

Add olive oil to a large pot and heat it.

Once the oil is heated, add minced garlic, finely chopped onions, and flavorful bay leaf, and cook for 2 minutes until aromatic.

Add celery to enhance the flavor. After mixing celery, add mixed herbs and cook for two minutes for the herbs to infuse themselves with the ingredients.

Add diced potatoes, strained kidney beans, and vegan meat. Stir well so all the potatoes, beans, and meat are completely covered with the aromatic mixture.

Next, add peeled tomatoes along with their juice, chicken bouillon powder, and water and mix well. Let the stew simmeron slow heat for 10 to 12 minutes.

Garnish the flavorful stew with finely chopped coriander. Enjoy the soulful stew with some warm toasted bread!

While veganism has its roots in environmental concerns and animal welfare, its numerous health benefits have also drawn a large number of followers. And, given that most people begin the new year with food-related resolutions, the term ‘Veganuary’ has gained popularity in recent years. Re-emergence of eating disorders

Pandemic brought huge changes in the whole life style of people. A new research into the lingering impact of the Covid-19 pandemic has revealed correlations to six unhealthy eating behaviours.

The study found six key themes of eating behaviour changes — mindless eating and snacking; increased food consumption; generalized decrease in appetite or dietary intake; eating to cope; pandemic-related reductions in dietary intake and a re-emergence or marked increase in eating disorder symptoms.

The researchers said that the most concerning findings are a slight increase or the re-emergence of eating disorders, which kill roughly 10,200 people every year — about one person every 52 minutes.

“Eating disorders have one of the highest mortality rates across all psychiatric health concerns and therefore, it is important to try to make links between the consequences of the pandemic and disordered eating behaviours,” said researcher Melissa Simone from the University of Minnesota.

For the study, published in the International Journal of Eating Disorders, the team included over 700 respondents.

The study aimed to understand potential associations between stress, psychological distress, financial difficulties and changes in eating behaviours during the Covid-19 pandemic through the analysis of both qualitative and quantitative data.

Approximately 8 per cent of those studied reported extreme unhealthy weight control behaviours, 53 per cent had less extreme unhealthy weight control behaviours and 14 per cent reported binge eating.

The study also revealed that these outcomes were significantly associated with poorer stress management, greater depressive symptoms and moderate or extreme financial difficulties.
