To make these, you’ll need 2 cups of besan (gram flour), 1/2 cup of desi ghee (clarified butter), 1 cup of artificial sweetener, and 1 tsp of cardamom powder. Begin by roasting besan in ghee until golden, cool it, and mix in the sweetener and cardamom powder. Shape the mixture into laddus and savour the nostalgia without the sugar spike.

Sugar-free Kalakand

This delectable dessert offers a delightful twist, ensuring a sweet treat without the sugar rush. To create Kalakand, you need 2 cups of milk powder, 1 cup of heavy cream, 1/2 cup of milk, 1/4 cup of your choice of artificial sweetener, 1/2 teaspoon of cardamom powder, and optional saffron strands and chopped nuts for garnish. It’s a perfect choice for those determined to control their sugar intake.

To prepare, grease a plate or shallow pan, combine heavy cream and milk in a non-stick pan, and gradually add milk powder while stirring to prevent lumps. Add your preferred artificial sweetener, cardamom powder, and optional saffron strands as it thickens. Once it leaves the pan’s sides, transfer it to the greased plate, garnish with nuts, cool it at the level of room temperature, refrigerate, and cut it into squares or diamonds. Nariyal Laddu

Lauki Ka Halwa

This healthy dessert calls for 2 gourds, 3 tbsp of desi ghee, cloves, raisins, cardamom powder, cinnamon powder, 1 cup of milk, and 1 cup of jaggery powder. Apple Rabdi

CLASSIC CHOCOLATE FONDANT

The Chocolate Fondant has established itself as a standard in the world of gourmet desserts because to its exquisite look and delicious flavour. Anyone’s mouth would moisten at the notion of biting into this dessert’s warm, oozing centre. This classic dish will please both guests and family, whether you’re throwing a dinner party or just want to indulge in something sweet. Ingredients:

  • 4 ounces (113 grams) dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks

  • 1/4 cup all-purpose flour
  • Pinch of salt
  • Optional: cocoa powder or powdered sugar for dusting

Method:

  • Preheat your oven to 425°F (220°C). Grease and lightly flour individual ramekins or molds.
  • In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  • In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.
  • Gradually pour the egg mixture into the melted chocolate, whisking continuously.
  • Add the all-purpose flour and salt to the mixture, and gently fold until just combined. Be careful not to overmix.
  • Divide the batter evenly among the prepared ramekins or molds, filling them about 3/4 full.

  • Remove the baking sheet from the oven and let the fondants cool for a minute or two.

Method:

  • In a mixing bowl, combine all-purpose flour and ghee. Mix well until the ghee is evenly incorporated into the flour.
  • Gradually add water and knead the dough until it is smooth and firm.
  • Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
  • In a separate bowl, mix grated dark chocolate, desiccated coconut, powdered sugar, cardamom powder, and chopped nuts to prepare the filling.
  • Divide the dough into small portions and roll each portion into a thin circle.
  • Place a spoonful of the chocolate filling in the center of each dough circle.
  • Fold the dough over the filling and seal the edges by pressing them together.
  • To make the sealing paste, mix all-purpose flour with water to form a thick paste.
  • Take a little of the sealing paste and apply it on the edges of the folded dough to secure the seal.
  • Trim off any excess dough using a cutter or knife to give it a neat shape.
  • Repeat with the remaining dough and filling.
  • Heat oil in a deep frying pan or kadai over medium heat.
  • Carefully slide the filled karanjis into the hot oil and fry them until they turn golden brown and crispy.
  • Remove the fried karanjis from the oil and drain them on a paper towel to remove excess oil.
  • Allow them to cool before serving.

This article will look at five simple and unique methods to keep your baking utensils and equipment clean, with a focus on tools used for desserts.

Clean mixing bowls with white vinegar

Mixing bowls are a vital tool for any baking endeavor, but they may be difficult to clean, particularly when dough or batter has adhered to the sides. White vinegar is an effective way to clean mixing bowls. Start by filling the bowl with hot water and add a cup of white vinegar. Let the mixture settle for about 30 minutes, then drain the water and clean away any leftover residue with a brush. Rinse thoroughly with warm water and pat dry with a clean towel.

Rolling Pins should be cleaned with a toothbrush

Although rolling pins are intended to flatten dough or pastry, they can acquire residue over time. Use a toothbrush with soft bristles to remove any debris from the grooves of a rolling pin. You can also clean the rolling pin’s surface using a moist cloth. Avoid soaking wooden rolling pins in water, since this might cause the wood to deteriorate. Instead, use a moist cloth to wipe the surface and a clean towel to dry it.

Use Lemon Juice to Clean Measuring Cups

Clean Stand Mixers with a Toothpick

Stand mixers are a staple tool for any baker, but they can also accumulate residue, like spilt batter, in hard-to-reach areas. To clean a stand mixer effectively, use a toothpick to remove any residue from the crevices. You can also use a damp cloth to wipe down the surface of the stand mixer.

Soak Pastry Bags in Warm Soapy Water

Use cloth or silicone pastry bags to avoid single use plastics. Since pastry bags are used to pipe dough or filling, they can become clogged with residue over time. To clean a pastry bag, fill it with warm soapy water and let it soak for about 30 minutes. Then, rinse with warm water and hang it to dry. You can also use a pastry brush to clean the inside of the pastry bag. For reusable pastry bags, avoid using hot water, as this can cause the bag to melt.

Yummy desserts for Valentine’s Day

Valentine’s Day is just around the corner, and while there are lots of things you can plan on doing for your special someone on the occasion, making something for them from scratch would be really sweet and romantic. We have compiled a list of really yummy desserts that you can bake for your Valentine this year. Take a look:

Vanilla Cake with Strawberry Compote

Recipe by: Sous Chef Sasha Wadhwa – Pastry & Bakery, Couche Patisserie
PREP TIME: 40 MINS
Cooking: 2-3 hours

Ingredients for Vanilla Sponge Cake (6-inch pan):
100 gms Maida
1/2 tsp Baking Powder
140 gms Thick Curd
1/2 tsp Baking Soda
80 gms Caster Sugar
50 gms oil
1/2 tsp Vanilla Extract
Baking Time – 25-30 minutes
Baking Temperature – 150°C
Method:
1. Preheat oven to 150°C
2. Mix the baking soda and curd well and set aside.
3. Whisk oil and caster sugar until well combined.
4. Add in vanilla and curd + baking soda mixture and whisk until it comes together.
5. Sift in the maida and baking powder and fold gently with a spatula until the batter looks well combined and no flour pockets are visible.Vanilla Cake with Strawberry Compote

6. Pour into a greased pan and bake for 25-30 minutes, or until a skewer inserted to check doneness comes out clean.
Ingredients for Strawberry Compote:
80 gms diced Strawberries (1)
160 gms chopped Strawberries (2)
3 tbsp/45 gmsCaster Sugar
1/4 Lemon
1/2 tsp Vanilla Extract (optional)
Method:
1. Add 80 gms of diced strawberries to a pan with the caster sugar. On a Valentine’s Day Recipe: 3 desserts you can make for your special someone!
2. When the mixture has thickened up (about 10-15 minutes), switch off the flame and set aside. Let it cool.

3. Add the chopped strawberries to the cooked strawberry compote, along with the lemon juice and vanilla, and mix to combine. Refrigerate until required.
Slice the vanilla sponge cake and serve with a side of strawberry compote and whipped cream.
Serving suggestion – You can also make a layered cake by slicing the cake in half horizontally and layering it with strawberry compote and whipped cream. Cover the sides and top with whipped cream and garnish with fresh strawberries.


Blueberry & Blue Matcha Cup Cake

Recipe by: Group Pastry Chef Balwinder Singh – Centre Point Hotel, Nagpur

Ingredients
Cup Cake Batter:

50gm Butter
50gm Castor sugar
1no Egg
50gm Flour
0.02gm Baking Powder
0.05gm Blue Tea Matcha Powder
0.1gm Blueberry Filling
For topping:
20gm Whip cream
2gm Blue Tea Matcha Powder
5gm Milk Maid
2no Fresh Blueberries
Sugar Sprinklers for Garnish
Method:
1. Weight all the above ingredients and cream butter and castor sugar, whisk them together.
2. Now add eggs and mix them well till all lumps smoothen properly.

3. Now add all dry ingredients and blueberry filling and mix till all ingredients may make a smooth Batter.
4. Reheat oven to 180 degrees C and bake the mixture by pouring in cupcake molds for about 12-15 min.
5. For topping take whip cream add milk maid and blue matcha powder and make smooth blue cream.
6. Now cool the cupcake for an hour. Now put the prepared topping cream in a piping bag and pipe the cream with a star nozzle on top of the cupcake as you desire. Now garnish with blueberries and sugar sprinklers.

Sponge cake:
3 eggs with vanilla essence
90g sugar
90g flour
30g unsalted butter, melted
For the syrup:
200ML cane sugar syrup (50gm sugar and 150ml hot water)
For the strawberry mousse:
3 gelatin sheets
370ml whipping cream (up to 40 per cent fat)
250g strawberries
50g sugar
For the garnish:
250g fresh strawberries
Method
Sponge cake:
Whisk eggs with sugar until light & fluffy, slowly fold in the flour. Add the melted butter at the last and bake at 180c for 15 mins in a heart-shaped tin.
Strawberry mousse:
Soak the gelatin in ice-cold water. Take the strawberries in a pan and sugar. Cook slowly and create a preserve-like structure. Add the soaked gelatin to the compote. Whip the cream until soft and fluffy. Fold the cream in the compote. Creating a strawberry mousse. Chill in a refrigerator.
Assembling:
Take a heart shape ring and arrange strawberries on the corners. Take the sponge and apply sugar syrup using a brush. Pipe the strawberry mousse using a star nozzle and put 1/2 strawberries in an arrangement. Creating an aesthetic look. (ANI)

There are several reasons why winter is the favorite season of all. We wait for winter for the joy of snuggling inside a blanket and reading books with a cup of coffee. The chilly weather is not only the ideal time for bonfires, hot showers, family picnics, and sleeping under a cozy blanket, but also to relish a wide array of mouth-watering delicacies.

In fact, winter memories are incomplete without rich and regional winter specialties like dessert. Nothing compares to the warmth of digging into traditional winter sweets. Indians have a long tradition of preparing various desserts at homes across the country. In Odisha, too, winters are memorable for delicious sweet items during different festivals (like Prathamashtami and Manabasa Gurubar).

There are several different types of dessert, like Rasabali, KheeraGaja, ChhenaPoda, Rasagola, etc., available in Odisha, the state of Lord Jagannath. Here’s a list of Odia desserts shared by Abinas Nayak, Co-founder & Corporate Chef of Rroshashala that can be savored, especially during winter.

Arisa Pitha

It is an authentic traditional sweet pancake prepared on the occasion of Manabasa Lakshmi Puja in the month of Margashir. Odia people also prepare it in wedding ceremonies, a popular custom in Odisha where bridegrooms carry a basket filled with Arisa pithas to their in-laws’ houses as a symbol of wealth and prosperity. This dry and hardened pitha is made of rice flour, sugar/jaggery, and sesame seeds by deep frying in refined oil. The crispy and crunchy outer layer surrounds the soft insides of this tasty traditional pancake.

Ata Kakara


This traditional sweet pitha is usually prepared with whole wheat flour, ghee, sugar, cardamom, black pepper powder, and fennel seeds and stuffed with coconut and jaggery during religious festivals daily in Puri. Also known as Sana Kakara, it is one of the AbhadaBhoga (Mahaprasad) recipes offered to Lord Jagannath during MadhyannaDhupa (a midday meal served from 12.30 p.m. to 1:00 p.m.). Besides, this famous Odia sweet dish is also offered to Mahalaxmi as bhog.

Gainthapitha

It is a melt-in-your-mouth dessert made on the auspicious day of ‘BaulaAmabasya by using small rice dumplings cooked in creamy milk. Also known as mango flowers, boulaphula is offered to Lord Jagannath to get a good harvest. The preparation might seem simple, but it surely needs precision. The rice flour balls are cooked in flavoured milk, with some cardamoms and some strings of saffron in the milk.

Haladi Patrapitha

This pitha (also known as enduropitha) is a traditional Odia delicacy prepared during PRATHAMASTAMI, a ritualistic festival of Odisha celebrated by Odia households to pray for the long life of the firstborn child in a family. This pitha is made from rice and black gram batter and steamed within the moulds prepared from turmeric leaves. Odia people use sweetened coconut as the stuffing of the pitha. The aroma of turmeric leaves that gets incorporated into the pitha is the uniqueness of the recipe.

Chenna Jhilli
