The arrival of spring welcomes fresh blooms and a renewed Botanical Afternoon Tea menu at London Marriott Hotel Park Lane. The gorgeously array of treats arrives on a table by the window with spring sunshine outside. Featuring a delicate rose and raspberry cream choux swan, a light and refreshing garden pond cheesecake, a lemongrass and pistachio chocolate forest log and more treats await you when you book this afternoon tea experience. All to be enjoyed while sipping one of their carefully selected JING teas, bubbles or house cocktails. The afternoon tea is priced at £50 per person with a glass of bubbles. Free-flowing bubbles are also available upon request. 

As part of this experience their savouries include Prawn, asparagus, cherry tomato and dried olives in filo tart; BBQ confit duck, tomato and gem lettuce brioche bun; Spring vegetable and truffle egg mayo in charcoal basket; Beans coronation, peppers and hummus sandwich. They also have vegan/vegetarian/gluten-free options too.

Next comes the scones selection which includes Home made plain scones to Homemade rose and hibiscus scones, served with Homemade jam and Cornish clotted cream. Ingredients:

1 cup of long-grain white rice

1 chopped white onion

1 ½ cup of tomato juice

1 teaspoon kosher salt

1 teaspoon pepper

1 dash of Tabasco

1 cup crumbled bacon

¼ tablespoon bacon drippings

500 gm chopped shrimp

500 gm sausage roll

Method:

Cook the bacon until crispy, then set it aside and save the drippings.

Cook the shrimp separately, either by steaming or sautéing, and set them aside.

Crumble and crisp up the sausage, drain the grease, and set it aside as well.

Sauté the chopped onion in the reserved bacon drippings until golden brown, then set it aside.

In a large saucepan, combine the uncooked rice, tomato juice, salt, pepper, and Tabasco sauce according to package instructions.

Once the rice is cooked, mix in the cooked shrimp, crumbled bacon, and sausage.

Stir everything together well and enjoy your delicious dish!

Andy Garcia | Recipe for Fricase de Pollo

Andy Garcia enjoys cooking, making it a full-day event filled with music, dancing, and plenty of garlic. His crowd-pleasing recipe requires starting the night before to ensure tender and flavorful meat, but the effort is worth it for the delicious outcome. Talking about the profound connection between food and cherished memories, Andy shares “A curious thing about food is that it brings back very particular memories. Taste, smell… induces this kind of nostalgic times in your life that hopefully are positive, you know?”

Ingredients:

2 to 3 kilograms of chicken thighs

10 garlic cloves

1 cup of lime juice and 1 cup of orange juice combined

3 large onions, sliced

3 sliced peppers (green, red, and yellow), one of each for colour

2 small cans of tomato paste

Salt to taste

1 can of green peas

¼ cup of olive oil

1 cup of raisins

½ cup of pitted green olives

2 teaspoons of capers

½ teaspoon of black pepper

1 cup of Spanish dry sherry wine (or substitute apple cider vinegar if needed)

500 grams of potatoes, cut into pieces

Method:

The night before, marinate the chicken in a glass container with chopped garlic, onions, green peppers, salt, black pepper, and a mix of lime and orange juice. Cover and refrigerate overnight.

When cooking, heat oil and brown the chicken, then set it aside.

In the same casserole, sauté onions, peppers, and garlic from the marinade. Add sherry wine to deglaze the pan.

Stir in tomato paste, raisins, olives, capers, salt, and pepper.

Add the chicken to the casserole and mix well.

Add enough water to barely cover the chicken and cook over medium-low heat until the chicken is tender.

In the last 30 to 45 minutes of cooking, add the potatoes to cook.

Serve the fricassee with sliced ripe plantains (cooking bananas) fried in vegetable oil and white rice.

Matthew McConaughey and Camila Alves McConaughey discuss how their childhood kitchens influenced their identities and relationships, revealing their approach to resolving conflicts with tea and tequila. Matthew recounts, “But the kitchen is where everything went down. The kitchen is where we cried when our heart was broken from a girlfriend breaking up. The kitchen’s where my brother Pat got in trouble for getting caught with the bag of weed. Then the kitchen is where we said our gratitude and prayers around the lazy Susan. The kitchen’s where we told stories, where I learned as a youngster in my family, if you want to get a story, you better hit the gap because a gap is not going to be there in the conversation long.”

Ingredients:

3 tablespoons avocado oil

6 cloves of garlic, smashed or grated

1 teaspoon salt

1 medium-sized diced white onion

1 tablespoon achiote annatto powder (orange-red condiment for food colouring)

1 medium-sized quartered fresh tomato

3 bone-in split chicken breasts with skin

¼ red bell pepper, cut into thin strips

4 cups of water (divided in half)

¼ cup of chopped cilantro

1-2 bay leaves

2 tablespoons of media crema (table cream); no liquid chill the entire can in the refrigerator, cream will rise to the top

1 cup of canned corn

⅓ cup of sliced pitted green olives

For serving:

Shoestring potato sticks

Cooked rice

Method:

In a large soup pot over medium heat, add avocado oil, smashed garlic, and salt. Stir until the garlic is fragrant.

Add diced onions and cook until translucent. Then, add quartered tomatoes and cook until soft and mushy.

Push ingredients to the side and add annatto powder to the middle of the pot. Let it cook briefly, then mix with other ingredients to form a paste.

Place chicken skin side down in the pot to brown. After a few minutes, push the ingredients aside and add bell peppers.

Pour enough water to cover the chicken (about 4 cups). Add cilantro and bay leaves.

Cover the pot, bring to a boil, then reduce heat and simmer for 2-3 hours until chicken is tender and can be easily shredded.

Remove chicken from the pot, let it cool, then shred meat, discarding bones and skin. Reserve broth for other recipes.

In a large skillet over medium heat, add shredded chicken and 2 tablespoons of media crema (table cream), mixing until well combined.

Stir in canned corn and sliced green olives, heating until warmed through. Add reserved broth if needed for the required consistency.

Serve your Brazilian Chicken Stroganoff over rice, topped with potato sticks.

Vegan Culinary Delights: W Hotel London

With more and more people adopting vegan plant based diet and especially being dedicated to Veganism, W hotel showcased their Veganuary menu in style. Head Chef Rohan Almeida said that “ hotel has been getting very good feedback from diners after trying the vegan dishes we have had on our menu, it inspired me to celebrate the vegan month of January by curating a special three course vegan menu.” A feature by FnB columnist Riccha Grrover for Asian Lite International.

The menu consisted of a starter of spiced tofu marinated in gochujang seasoning served with coriander chilli pesto and coconut yogurt. This was a very light and smooth starter to get started with the meal experience.

For mains there was a choice of aubergine quinoa chickpea ragu which is one of their zero waste dish that was served with tempura courgette flower and a caper with tomato salsa- this dish was a balance of texture, colours and taste.

The other mains option they were serving was redefine meat burger, a burger which was plant base severed with avocado chilli, harissa slaw and sweet potato fries. It gave the feel of having a regular burger but with vegan goodness! 

Both the mains were very delicious and full of culinary finesse.

To finish off the vegan meal W hotel london menu had a showstopper dessert that looked like an apple but which they titled “not an apple”. This was a colourful, tasty and a very light dessert that can surely inspire many to turn vegan! It was a delicious apple crumble with the notes of coconut, cinnamon to add layers of flavour and depth to it .

The service was impeccable, the presentation impressive, portion sizes were generous and taste was outstanding! This vegan meal was surely an amazing one, and one to remember!

Savor the Essence of India

Paneer Tikka Masala with Creamy Tomato Gravy

Ingredients:

250g paneer, cubed

1 cup yogurt

1 tablespoon ginger-garlic paste

1 tablespoon tikka masala spice mix

Salt to taste

2 tablespoons oil

1 onion, finely chopped

2 tomatoes, pureed

1/2 cup cream

Fresh coriander for garnish

Instructions:

In a bowl, combine paneer cubes with yoghurt, ginger-garlic paste, tikka masala spice mix, and salt.

Microwave the mixture in your Voltas Beko microwave for 5 minutes to allow the flavours to infuse into the paneer.

Add finely chopped onions to the dish and microwave until golden brown. The Digital Display in the Voltas Beko microwave helps you to keep an eye on the food so you can ensure that it is being cooked perfectly.

Stir in pureed tomatoes into the dish with onions. Microwave for an additional 5 minutes, allowing the tomatoes to cook down and meld with the onions.

Add the marinated paneer to the tomato and onion mixture. Microwave the entire mixture for an additional 5 minutes to let the paneer absorb the rich flavours.

Pour in 1/2 cup of cream, stirring well to create a creamy texture. Microwave for a final 2-3 minutes to allow the flavours to come together.

Garnish the Paneer Tikka Masala with fresh coriander before serving.

Saffron Sweet Pearls with Cardamom Baked Yogurt by Novotel Mumbai Juhu Beach

Cardamom baked yogurt

250gms Hung curd

60gms Icing sugar

100gms Condensed milk

125gms Fresh cream

5gm Cardamom powder

Method

Mix all the ingredients together in a mixing bowl

Whisk the mixture till you get smooth consistency

Pour the above mixture in an earthen pot or kulad

Bake at 150◦c for 16minn on double bath

Refrigerate for 2 hours serve chill

Sweet pearls (Bondi)

250gms Gram flour (besan)

A pinch of baking soda

90ml Water

1gms Saffron strand

Oil for frying

Sugar Syrup

200gms Sugar

100ml Water

2 nos Cardamom

1gms Saffron

50ml Rose water

Method

Add the sugar water saffron and cardamom in sauce pan

Make a thick syrup add rose water for flavoring

Add water to gram flour to form smooth batter

Add the saffron to the mixture

Lastly add baking soda to the mixture and whisk well

To make Bondi pass the mixture through the perforated ladle on the hot oil kadai

Remove Bondi strain all the oil completely

Dip the Bondi in warm sugar syrup rest it for an hour

Remove the excess syrup through strainer

Finally, sweet Bondi is ready to serve

Assembly

Serve the cardamom baked yoghurt in a kulad with sweet Bondi and chopped nuts as garnish

Tiranga Moti Cheese Cake

Cardamom cheese cake

250gms Philadelphia cheese

250gms Fresh double cream

200gms White chocolate

10gms Cardamom powder

Method

Cream the with the balloon whisk cheese till smooth

Add the fresh double cream slowly the cheese mix and keep whisking

Add the white chocolate and cardamom powder to it

Set the cheesecake mix in a tray and chill in a freezer

Sweet pearls (Bondi)

250gms Gram flour (besan)

A pinch of baking soda

90ml Water

1 gms Saffron strand

Oil for frying

Sugar syrup

200gms Sugar

100ml Water

2 nos Cardamom

1gms Saffron

50ml Rose water

Method

Place the chocolate on the plate cut the cheesecake place on above the other indicating the flag colour

In the rapidly evolving landscape of the food industry, ‘smart protein’ is fast emerging as a revolutionary sector. Smart protein (also called alternative protein globally) is a pioneering food category that provides viable alternatives to animal-derived meat, eggs, and dairy, with vastly better implications for food security, public health, and planetary health. Smart protein has the potential to transform our food system, nourish our people, and renew the environment that gives us sustenance. As we look ahead, 2024 promises to be a year where smart protein takes center stage in India—with approximately 113 startups actively innovating in plant-based, fermented, and cultivated proteins, supported by a network of over 100 companies, the sector is on the cusp of a major breakthrough.

The acceptance of ‘smart protein’

India has often used “smart” as a prefix in the name of policies, plans, and projects to indicate renewal toward a future that is more efficient, sustainable, technologically advanced, and, thereby, smart. In recent years, many government agencies have prioritized the growth and development of smart protein across multiple sectors, including research and development (R&D), exports, talent development, and manufacturing. This was seen at its most impactful in 2023—with APEDA, MoFPI, FICCI, DST, DBT-BIRAC, and Invest India, among others, working closely with the smart protein ecosystem across all three modalities. This reflects a forward-thinking approach to address the evolving needs of the food industry and global sustainability concerns, and with the Department of Biotechnology (Government of India) instituting a sectorial committee on ‘smart proteins’, there is increased optimism that this momentum will continue, with the expectation of dedicated funds being allocated to support the sector.

Indigenous meets innovation

Following the spotlight on millets in 2023, 2024 promises to usher in a wave of innovation with novel ingredients and indigenous crops in the smart protein sector. Besides climate-hardy crops like millets, legumes, and pulses, mycoprotein, a highly researched plant-based protein, stands out for its ability to address micronutrient deficiencies and match animal proteins in nutritional value. Algae-based products are another area to watch. With their potential as a sustainable food source and their wealth of nutritionally valuable compounds, algae are on the brink of a breakthrough. India, with its favorable geographical and climatic conditions, is poised to become a key player in the cultivation of microalgae and seaweed. Technological innovation is the linchpin in this narrative, and 2024 could be the year we see these innovations bear fruit.

Tech-powered future of food

In 2024, the alternative protein industry in India is set to leap forward with AI and 3D printing technologies leading the charge. AI advancements, as seen in GreenProtein AI and Climax Foods Inc., are redefining plant-based meat production, creating products that rival traditional animal proteins in taste and texture. Then there’s 3D printing, which goes beyond just texture and taste. Imagine a world where food production is not only sustainable but also has the capability to precisely meet dietary preferences and nutritional requirements, thanks to the precision of 3D food printing. With institutions like NIFTEM-Thanjavur leading research and development in this domain, 2024 is poised to witness significant advancements in 3D food printing, particularly in creating alternatives to animal-derived products that cater to the diverse palate of the Indian consumer.

Expanding geographies

Collaboration seems to be the buzzword for 2024. Companies like Shaka Harry, Evoled Foods, and Blue Tribe Foods, along with Plantaway, GoodDot, and Greenest, have emphasized the need to move away from working in silos, and are increasingly entering HoReCa and B2B associations to take plant-based alternatives to a broader audience. This trend will be a key driver in an industry poised to burgeon to a staggering $4.2 billion by 2030. Amidst this exciting evolution, the FMCG giants are not far behind. Nestlé, joining the ranks of ITC and Tata Consumer Products, is gearing up to introduce a range of plant-based products tailored for the Indian palate. With government bodies like APEDA supporting the export ambitions of startups like Wakao, Greenest, Shaka Harry, and BVeg, we may also witness a surge in plant-based exports—poised to reach a whopping INR 6,824 crores by 2030.

P(l)awsible change

Even the pet food industry is catching up with the plant-based phenomenon. As the amount of pet parents increases and sustainability becomes a priority for them, the demand for plant-based pet products is also witnessing a surge. Leading this change are innovative brands like Pawsible Foods, which utilize innovative fermentation techniques to convert mushroom by-products into high-value mycoprotein that is palatable for pets. Similarly, Cleen.PET is redefining pet nutrition with its focus on cleen plant/fungi-based protein.

The promise of precision fermentation

Nearly 65 percent of precision fermentation companies are focused on creating dairy proteins. Globally, 136 companies are focused on fermentation technologies. Additionally, another 100 businesses, including giants like Nestlé and Unilever, have a vertical in alternative protein fermentation. While Indian companies like Phyx44 and Zero Cow Factory are spearheading the precision fermentation-based milk protein innovation in India, India’s inherent biomanufacturing capabilities can witness several new entrants in the sector.

Keeping it real (and) clean

By incorporating high-quality plant-based ingredients, manufacturers can offer products that not only align with the ethical and environmental values of modern consumers but are also healthier. This approach is particularly relevant in India, where there is a cultural predilection for plant-forward diets. As such, we can expect a surge in products that boast of ‘clean labels,’ emphasizing natural ingredients and fewer additives, which will cater to the informed and health-aware Indian consumer. This trend is likely to drive innovation in the food industry, with a focus on developing products that are both nutritious and aligned with the principles of sustainability and wellness.

Plant-powered performances

As the world gears up for the 2024 Summer Olympics, there’s more than just athletic prowess on display—we’re set to witness a surge in real-life examples of plant-based diets in sports. Additionally, building on the momentum generated by the 2018 documentary “The Gamechangers,” the Olympics’ partnership with Nestlé-owned Garden Gourmet promises to spotlight plant-based diets’ role in high-energy performances.
