Delectable Eid recipes for the upcoming festival

An increasing number of Muslims are choosing vegan diets for a variety of reasons, mainly for health reasons and due to the impact, it has on the environment and animals. Vegans are less likely to suffer from heart disease, cancer, and diabetes, all of which are major concerns in India.

Syed Muskaan Hassan,, Vegan Chef and Food Consultant, Tehseen Mehdifacilitator at SHARAN India, along with actor Sadaa Sayed, founder of the vegan Earthlings Cafe in Mumbai, share delectable Eid recipes for the upcoming festival.

Vegan Hyderabadi Biryani Using Mock Meat I Serves 5

Adapted from a recipe by Syed Muskaan Hassan, Food Consultant and Vegan Cccchef

Ingredients

For the vegan curd

1 cup peanuts, soaked overnight and drained

2 cups water

5 green chillies

For the vegan meat

2 cups vegan curd

2 tbsp red chilli powder

1 tsp turmeric powder

2 tsp garam masala powder

1 Tbsp salt

1 tsp coriander powder

bunch of mint leaves, chopped

bunch of coriander leaves, chopped

6 onions, finely cut and fried until golden brown

10 green chillies, ground into a paste

Juice of 4 lemons

250 g vegan meat (of your choice)

For the rice

250 g rice, soaked for 30 minutes and drained

2 tsp cardamom pods

2 stick cinnamon

2 tsp cloves

1 bay leaf

2 tsp whole black peppercorns

1 tsp caraway seeds

To garnish


Mint leaves, chopped

Coriander leaves, chopped

Fried onions

Juice of 2 lemons

cup vegetable oil

Method

For the vegan curd

* Add the soaked peanuts to a blender along with the fresh water and blend. Strain the mixture to get peanut milk.

* Pour the peanut milk into a saucepan and bring it to a boil. Cool for 20 minutes.

* Break the chillies in half and drop them into the peanut milk to curdle it. After the mixture thickens and sets, discard the chillies and whisk the curd well.

For the vegan meat


* Mix all the ingredients together except the vegan meat. Add the vegan meat and mix well. Set aside for 4 hours.

* Add the mixture to a pressure cooker and cook for 6 whistles.

For the rice

* Add the water and spices to a deep pot and bring to a boil.

* Add the rice and simmer until semi-cooked. (Because this is dum biryani, it’ll become soft and break if the rice is completely cooked.)

To assemble the biryani

* In a large wok, add the cooked mock meat first, followed by the rice.

* Garnish with the mint and coriander leaves and the fried onions.

* Pour the lemon juice and the vegetable oil over the top.

* Close the lid tightly and cook over a medium flame for 25 minutes.

Vegan Shammi Kebab I Serves 3-4

Ingredients

1 tbsp ginger-garlic paste

1-2 green chillies, finely chopped

1.5 cups soya granules, soaked in warm water, drained, squeezed dry, and shredded in a blender

1 tsp garam masala powder

1 tsp red chilli powder

Rock salt, to taste

2 cup roasted chana dal (dalia), powdered

2 cup boiled black chickpeas (kala chana)

1 large onion, finely chopped

1-2 tsp finely chopped coriander leaves

Peanut powder for coating (optional)

Sliced onion rings and lemon wedges (to garnish)

Method


* In a pan, saute the ginger-garlic paste and half the green chilli.

* Add the shredded soya, garam masala powder, red chilli powder, and salt. Mix well for 1-2 minutes.

* Allow to cool, then add the roasted chana dal powder and chickpeas and mash well.

* Add the onion, the rest of the green chilli, and the coriander leaves to the mixture.

* Shape into round, flat Shammi kebabs. Coat with peanut powder (optional). Bake in an oven preheated to 180 degrees C or roast on a heated tawa until brown.

* Serve hot, garnished with sliced onion rings and lemon wedges.

Sheer Khurma

Adapted from a recipe by Sadaa Sayed, actor and founder of Earthlings Cafe, Mumbai

Ingredients

2 cup broken vermicelli (seviyan)

2 Tbsp neutral oil (such as sunflower)

1 Tbsp chopped cashews

1 Tbsp sliced almonds

1 Tbsp sliced pistachios

1 Tbsp charoli (optional)

1 Tbsp golden raisins

2 cups soy or almond milk

 cup sugar

2 tsp cardamom powder

Method

Roast the seviyan in 1 tablespoonful of the oil until golden brown. Set aside.

Add the remaining oil to the same pan and roast the nuts, the charoli (if used), and the raisins for 3 or 4 minutes, continuously stirring over a low flame.

In a deeper pan, warm the soy or almond milk over medium heat. Add the sugar and keep stirring until the milk starts to boil and the sugar is dissolved. Lower the flame and simmer for 5 minutes.

Add the roasted noodles and allow them to soften, for about 5 minutes  be careful not to overcook. Add the roasted nut mixture and the cardamom powder. Mix well and cook for 2 minutes more.

Garnish with more nuts and serve hot or cold.

97 arrested; curfew imposed after Eid violence in Jodhpur

At least 97 people have been arrested in connection with the clashes that broke out between two groups in Rajasthan’s Jodhpur on Monday night and continued on Tuesday following which Internet services were suspended while curfew was clamped in 10 police station areas.

The Divisional Commissioner on Tuesday suspended Internet services in the entire Jodhpur district (including Jodhpur Commissionerate) with an aim to maintain peace and cordial atmosphere and curb rumours.

According to the order issued by the Divisional Commissioner Himanshu Gupta: “2G/3G/4G/data (mobile Internet), Bulk SMS, MMS/WhatsApp, Facebook, Twitter and other social media (Voice calls, Broadband Internet, Lease through Internet Service Provider) Internet services, except lines, have been suspended. This restriction will continue till further orders.”

The clashes had first erupted late Monday night.

The violence began after some people were raising flags at the Jalori Gate intersection around 11.30 p.m. on Monday. A person making a video of this was beaten up by some youth. When some people came to his rescue, they beat them also. After this, the other group started throwing stones. Deputy Commissioner of Police East and Udaymandir SHO were injured in the stone pelting.

The violence erupted again on Tuesday morning at the Jalori Gate over the unfurling of a flag. The police cane-charged the miscreants, fired tear gas shells and dispersed the mob.

In view of the tense situation, curfew was imposed in 10 police station areas.

Meanwhile, the Police Commissionerate has issued a partially amended order which says that students appearing in various school examinations, competitive examinations, teachers and staff engaged in examination work will be allowed to move during the curfew.

Medical emergency services, medical staff, bank employees, officials related to judicial services, employees, journalists and media persons would require to show identity cards or documents.

If necessary in special circumstances, the concerned Assistant Commissioner of Police would be able to grant permission to go out in the curfew.

Rest of the orders will remain the same.

ADG Law and Order Hawa Singh Ghumaria told that strict adherence to curfew in Jodhpur is being maintained.

Around 1,000 police personnel have been deployed in the district and every incident — small or big — is being closely monitored, he added.

Meanwhile, Rajasthan Chief Minister Ashok Gehlot directed the police and the administration to identify the anti-social elements responsible for the incidents that disturb communal harmony and brotherhood, and take stern action against them. He termed the incident in Jodhpur unfortunate.

Addressing a high-level meeting at the Chief Minister’s Office on Tuesday, he said that a criminal, irrespective of religion, caste or class, must not be spared if found to be involved in criminal activities and appealed to the general public to maintain peace.

He directed Home Minister Rajendra Singh Yadav, Minister in-charge of Jodhpur Subhash Garg, Additional Chief Secretary, Home, Abhay Kumar and Additional Director General of Police (Law and Order) Hawa Singh Ghumaria to immediately rush to Jodhpur.

Mushroom Pav – Portion: 2

Ingredients:

Mushroom 250gm

Porcini mushroom 20gm

Chopped garlic 10gm

Chopped ginger 5gm

Chopped masala 100gm

Lemon slice 15gm

Green coriander 5gm

Amul butter 10gm

Oil 10ml

Salt 2gm

Pav 8 pieces

Kitchen king 2gm

Green chilli 2gm

Onion rings (raw) 50gm

METHOD:


Take a pan heat it adds oil and saute chopped garlic and chopped ginger until it’s golden brown. Add mushroom and porcini mushroom in it and saute it until all the water reduces and it’s soft in texture. Then add chopped masala, kitchen king, green coriander to it. Add salt as per the seasoning. Take four pieces of pav (mini slider bun) cut it from the top and remove all sponges from inside. Then toast it in the oven for 10seconds and remove it back. Then fill it with the mushroom mixer. And garnish it with chilly and lemon slices. And some onion rings on the side.

Edamame Galouti Kebab

Ingredients:

Edamame 150 gm

Hung Curd 50 gm

Spinach 200 gm

Mace powder 10 gm

Black pepper 5 gm

Green cardamom 20 gm

Gram flour 100 gm

Salt 20 gm

Chaat masala 30 gm

Cumin powder 20 gm

Almonds 30 gm

Coriander leaves 40 gm

Green chilli 20 gm

Methi mayonnaise 2 tsp

Ghee 10 ml

METHOD

First take hung curd then add chopped edamame, blanched spinach, chopped green chilli, coriander leaves, gram flour, dried fruits, salt, mace powder, and freshly cracked black pepper. Mix well all the ingredients, making sure the edamame, spinach and hung curd are combined well. Do not over-knead and prepare small-sized patties or kebabs. Now, shallow fry kebabs on a hot plate with ghee till the kebabs turn golden brown. Drain the kebab into kitchen paper to remove excess oil. Finally, serve the edamame, kebab with methi mayonnaise.

UAE leaders send Eid greetings

President Sheikh Khalifa bin Zayed Al Nahyan, Prime Minister and Vice President Sheikh Mohammed bin Rashid Al Maktoum, and Sheikh Mohamed bin Zayed Al Nahyan, have sent his greetings to the kings, Emirs and presidents of Arab and Islamic states, reports Asian Lite News

President His Highness Sheikh Khalifa bin Zayed Al Nahyan, has sent his greetings to the kings, Emirs and presidents of Arab and Islamic states on the occasion of Eid Al Fitr.

His Highness Sheikh Khalifa wished them and their peoples continued progress, prosperity and stability.

His Highness Sheikh Mohammed bin Rashid Al Maktoum, Vice President, Prime Minister and Ruler of Dubai, and His Highness Sheikh Mohamed bin Zayed Al Nahyan, Crown Prince of Abu Dhabi and Deputy Supreme Commander of the UAE Armed Forces, have dispatched similar cables to the leaders of Arab and Islamic states on the auspicious occasion.

Sheikh Mohamed bin Zayed exchanged Eid Al Fitr greetings with His Highness Sheikh Nawaf Al-Ahmad Al-Jaber Al-Sabah, Emir of Kuwait; King Mohammed VI of Morocco; and President Bashar Al Assad of the Arab Republic of Syria, over phone calls.

He also exchanged greetings with His Highness Sheikh Mishal Al Ahmad Al Jaber Al Sabah, Crown Prince of Kuwait; His Royal Highness Prince Salman bin Hamad Al Khalifa, Crown Prince, Deputy Supreme Commander and Prime Minister of the Kingdom of Bahrain; President of Egypt Abdul Fatah el-Sisi; and His Eminence the Grand Imam of Al-Azhar Dr. Ahmed Al-Tayeb.

Moreover, Sheikh Mohamed received a telephone call from the Prime Minister of Israel, Naftali Bennett, who congratulated him on the occasion. Sheikh Mohamed thanked Bennett for the thoughtful gesture, and wished betterment and peace for all world nations.

In another phone call, Sheikh Mohamed and President Joko Widodo of Indonesia exchanged Eid greetings as well.

During the telephone calls, Sheikh Mohamed conveyed the greetings of President His Highness Sheikh Khalifa bin Zayed Al Nahyan to his fellow leaders and his wishes of further wellbeing, prosperity and development to their countries.

For their part, the leaders reciprocated the greetings and wished more progress, safety and security to the UAE people under the wise leadership of His Highness Sheikh Khalifa bin Zayed Al Nahyan. They also wished more prosperity and development to the Arab and Islamic nations, and all other countries.

Sheikh Mohamed also performed Eid Al Fitr prayer alongside worshipers at the Sheikh Zayed Grand Mosque in Abu Dhabi.

Performing prayers by His Highness Sheikh Mohamed’s side were a number of Sheikhs, senior officials, dignitaries, citizens and residents.

Dr. Mohammed Matar Al Kaabi, Chairman of the General Authority of Islamic Affairs and Endowments, delivered the sermon, during which he spoke about the significance of the occasion and the noble values it holds. He also pointed out that Eid is an occasion to strengthen communication with family, creating love and affection between relatives.

He wished President His Highness Sheikh Khalifa bin Zayed Al Nahyan good health and further progress and pride to the UAE and its people.

Disbursement of eidiyah

To bring happiness and joy on the occasion of Eid Al-Fitr children, His Highness Sheikh Mohamed bin Zayed Al Nahyan has ordered the disbursement of eidiyah – the tradition of giving cash to children during Eid – to children of beneficiary families social assistance provided by the Ministry of Community Development and those registered with local governments across all emirates.

Only children under 18 years will benefit from His Highness Sheikh Mohamed’s kind grant which shows his keenness to paint smile on faces of children and share joy with them and their families on the spectacular Eid occasion.

Israel greets Palestine, UAE, Bahraine

 Israeli President Isaac Herzog called Palestinian President Mahmoud Abbas to wish him a happy Eid al-Fitr, a celebration marking the end of the Muslim holy month of Ramadan, amid heightened regional tensions.

Herzog expressed hope for “peace and stability in the region” on the eve of Eid al-Fitr, said a statement issued by Herzog’s office, without elaborating on the content of the conversation.

He also spoke with Crown Prince of Abu Dhabi Sheikh Mohammed bin Zayed Al Nahyan and Bahraini King Hamad bin Isa Al Khalifa and wished them a happy holiday, Xinhua news agency reported.

Herzog’s office noted that the President is expected to speak with more leaders in the next few days.

It was the first official talk between Herzog and Abbas since the beginning of a wave of fatal violence between Israel and the Palestinians in March.

The UAE and Bahrain agreed to normalise their ties with Israel in the US-brokered Abraham Accords which were signed in September 2020.

The Israeli Presidency is a largely ceremonial position.

‘Runway 34’ will be an Eid gift


The trailer launch of the film took place at a multiplex in Andheri area of Mumbai with Rohit Shetty, who is Ajay’s childhood friend, in attendance along with the cast and crew of the film…reports Asian Lite News

The trailer of the upcoming thriller ‘Runway 34’ which stars Ajay Devgn in the lead role, was released on Monday.

The film, which sees Ajay juggling three different roles of lead actor, director and producer, is inspired by true incidents, and also stars Amitabh Bachchan, Rakul Preet Singh, Angira Dhar and Aakanksha Singh.

The film revolves around Captain Vikrant Khanna played by Ajay Devgn, a flying prodigy, whose flight takes a mysterious course after take-off from an international destination. With the thrill of the unknown in the sky, this film showcases Ajay collaborating with Amitabh Bachchan; whom he has directed for the first time.

The film’s trailer exhibits strong influences of the Tom Hanks and Aaron Eckhart-starrer ‘Sully’ with the dialogue, “Brace for the impact” serving as an uncanny resemblance to Clint Eastwood’s 2016 biographical drama where Hanks played the character of Chesley “Sully” Sullenberger.

Life without celebrations is inconceivable to most of the communities around the world. Eid Mubarak! Like all festivals, Eid brings with it happiness, excitement and elevating emotions; and of course food! The Eid feast is one of the most important elements of the celebration.

While celebrations entail paying homage to the Prophet and preparing a delectable feast, you can never have enough recipes to pick from. Sanjay Thumma, the founder of Vahchef — VahRehVah, is a well-known chef who is bringing Indian cuisine back to Europe, Australia, and North America. He returned to India after giving up his restaurants to pursue his actual passion for cooking, creating videos that he uploads to his YouTube channel, which has over 2 million subscribers.
