Chef Vikram Khatri  shares a hearty reci Chef Vikram Khatripe and his favourite picks that help you experience the mild flavours of Asian cuisine.

Mushi Dori steamed chicken

I always felt to keep one more chicken starter, which has to be non fried. So this steamed chicken has delicate flavours of Japanese herbs just melts and tastes fantastic with Miso Hollandaise.

Baked Avocado

The buttery Plump Avocado with curried vegetables paired with healthy Buckwheat noodles is the healthy munch from Guppy’s winter menu.”

Grilled Artichoke and tomato

I Am always fond of artichokes and here they are paired with dashi poached tomatoes and on the bed of Quinoa and cauliflower porridge.

Wok-fried Soft shell crab

A perfect seafood option from Winter Sea. I just thought of dedicating it to my last meal in Singapore

Black Chicken Nabe Hot Pot

The best from Guppy’s winter menu and my personal favourite. A perfect community meal where the black chicken comes from MP Kadaknath has all good nutrition and at Guppy it gets double with all winter vegetables and soul, comforting soup, all of which is packed in a cast iron pot and served on live fire stove.

Home Chef can try the following recipe

Black Chicken Nabe

Ingredients

8 cups chicken stock

1 large piece of kombu (about 3 inches)

2 Country Black Chicken ( kadak nath) deboned , Boneless leg and breast cut into thin strips( 0.5 inch approx)

1/4 small head Chinese  cabbage, cut into bite-size pieces

4-6 medium shiitake mushrooms, sliced

1 medium carrot, peeled, cut into 2-inch pieces, and thinly sliced lengthwise

2 teaspoons salt/Soy (adjust to taste)

1 medium radish, peeled, cut into thick

7-8 tablespoon Ponzu

Method

Put the stock and kombu (if using) in a Japanese Nabe, or other cooking pot. Heat over medium-high heat. As stock start simmering, remove the kombu.

Add the chicken and simmer over medium heat for 10-12 minutes (Depending on the size and age of chicken used, large chicken requires more time).

Add salt/soy in the stock. Check and adjust

Add the cabbage, baby Pok Choy, carrots, mushrooms, radish and leaks, arranging each ingredient in a separate, neat bunch. Sprinkle the salt over the ingredients in the pot.

Cover the pot and bring the liquid to a simmer. Simmer for 6 to 8minutes. Reduce heat if stock starts to boil.

Skim off any scum from surface of liquid while the nabe is cooking. Check for doneness and add more stock if required.

Serve entire Nabe bowl on the table. Serve the ingredients together with the broth in small bowls. Ponzu sauce can be added as desired. Serve with hot steamed rice.

Heavy rainfall lashes parts of Mumbai, 2 killed

The BMC Disaster Control reported 22 instances of tree crashes, including two with fatalities (as above), 4 complaints of short-circuits, and six minor house-crashes in the city…reports Asian Lite News

At least two persons were killed in rain-related incidents as Mumbai and surrounding districts were clobbered with torrential rains since Tuesday night, even as the road, rail and air traffic were largely unaffected, officials said on Wednesday.

According to Mumbai Police, a 38-year-old man Kaushal Doshi was killed when a massive tree crashed on him at Mamledarwadi in Malad west.

Another tree collapse was reported at Mithanagar in Goregaon west and 30-year-old Premlal Nirmal was killed, it said.

In a shocker, a landslide occurred on a portion of the road near the Mumbai Metro Magathane station, near Borivali, causing minor damage but there were no casualties.

The Western Railway, Central Railway and the Harbour Lines functioned normally despite heavy rains and reported no water logging on the train tracks on the entire suburban sections, officials said.

According to the IMD, Mumbai city and suburbs notched a total of 77 mm rains each till 6 p.m. on Wednesday.

The BMC’s weather stations have recorded 32 mm in the city, 84 mm in eastern suburbs and 83 mm in the western suburbs till 6 p.m.

The incessant downpour resulted in waterlogging in many low-lying areas of the city and suburbs, ranging from ankle-deep to knee deep water, leading to massive traffic snarls reported across Mumbai.

The BMC Disaster Control reported 22 instances of tree crashes, including two with fatalities (as above), 4 complaints of short-circuits, and six minor house-crashes in the city.

A 17-year-old youth Rehan Shaikh was injured in a house wall collapse in Govandi and has been admitted to the Shatabdi Hospital. In Vikhroli, the BMC and police evacuated over two dozen slumdwellers after a landslide and mudslide due to the downpour and they shifted to their relatives’ homes though a private school was kept ready to house them.

Facing flak from various quarters, the BrihanMumbai Municipal Corporation (BMC) teams swung into action to clear the water but their efforts were hampered by the high tide in the Arabian Sea this evening at 7 p.m. with waves reaching 3.48 metres that pushed back the drainage water.

Sporting an orange raincoat, BMC Commissioner Dr. I.S. Chahal and his team of officials stepped into the field for a spot assessment of the rainfall situation in several areas, including a portion of the Mithi River, the pumping station at Hindmata and underground water storage tanks.

The downpour notwithstanding, the BMC has announced a 10 per cent water cut in the city from July 1, while Navi Mumbai will be slapped with a 15 per cent water cuts, said officials.

A compound wall crash in an NRI complex in Navi Mumbai flattened around a dozen vehicles parked besides, including some high-end cars, and the rescue officials were deployed for the clearing operations.

Large areas of Thane city – the hometown of Chief Minister Eknath Shinde, Badlapur, Bhiwandi, Kalyan, Dombivali and other towns – witnessed heavy rains with flooding in low-lying areas. The police, fire brigade, disaster teams and home guards were kept in readiness for quick deployment in any emergency as rains continue to pound Mumbai and surrounding districts.

The IMD has sounded rainfall alerts of varying degrees for Mumbai, Thane, Palghar, Raigad, Ratnagiri, Sindhudurg in the coastal Konkan region over the next three days.

Sabyasachi’s largest flagship store in Mumbai

Sabyasachi is a celebration of slow authentic luxury, of the handmade and the finest of Indian craftsmanship…reports Asian Lite News

Sabyasachi Mukherjee is a brand in his own right, widely known for his well-known Indian bridal wear and his distinctive contribution to Indian textiles with a modern twist.

The celebrated fashion designer announced the opening of his luxury house rooted in heritage, craft and culture in Mumbai at ICP Fort Heritage, Veer Nariman Road, Off Horniman Circle, which will be open from Monday to Sunday, 11 a.m. to 7 p.m., beginning April 18, 2023.

Sabyasachi is a celebration of slow authentic luxury, of the handmade and the finest of Indian craftsmanship. A brand that revels in India’s legacy but with a uniquely modern perspective, capturing what was and what is, with a single-minded vision to create modern heirlooms.

Sabyasachi unveils first glimpse of his largest flagship store in Mumbai.(photo:IANSLIFE)

The store is sprawled over 25,862 sq ft and housed in the majestic neo classical landmark built in the Italianate revival tradition. The neo classical building was completed in 1913 by Chambers and Fritchley and was originally built for the British Bank of The Middle East. The building is classified as a Grade II A heritage structure under the Heritage Regulations of Greater Bombay 1995. Bringing the ideals of fine culture back to this heritage structure, Sabyasachi has reimagined the interiors into an immersive retail space that merges the house’s signature cultural savoir faire with Indian decadence, craftsmanship and history.

Over 100 chandeliers, 275 carpets, 3,000 books and 150 works of art created by the Sabyasachi Foundation, are layered between age-old Tanjore paintings, Pichhwais in the Deccan, Nathdwara and Kota style, vintage photography, Mughal miniatures, rare bronzes, 19th century Company Paintings and rare lithographs. The space is lined with curiosity cabinets sourced from souks, modernist interpretations of Persian Qajars, 18th century Venetian handcrafted chairs, rare French Art Nouveau cabinets and arrogant brass sculptures made in Calcutta.

Leather-bound books, Tang dynasty pottery, rare Canton vases and odd antiquities lie on retrofitted turn of the century furniture with fine inlay work, alongside the house’s now signature block printed silk velvet lined busts, vitrines and lampshades. From Rajasthan to Bengal, vintage handwoven and crafted textiles from across India can be found all across the store, showcasing a sliver of India’s grand crafts legacy.

While the wallpaper and upholstery are part of the Sabyasachi for Nilaya collection by Asian Paints, presenting various house motifs and hallmarks. The space is a living museum and the most realised iteration of the Sabyasachi experience.

Housed within is a micro-exhibit from the Sabyasachi archive currently showcasing couture from the inaugural Sabyasachi X Christian Louboutin collaboration Bater, 2015 and its sequel Firdaus, 2016. Hidden lounges and dens dot each floor, with a tearoom tucked away behind silk velvet drapes, offers guests a moment of pause with a curated list of Sabyasachi’s favourite blends. Even as the signature notes of rose and frankincense waft through the labyrinthine space.

The ground floor homes the Sabyasachi bridal collection. The first floor is dedicated to the brand’s largest showcase of jewellery in the world, housing Fine, Heritage, and High Jewellery collections. And the second floor is home to womenswear, menswear, the international collection, and Sabyasachi Accessories. Sabyasachi’s vision for the retail experience remains consistent across the various cities and stores. It’s an escape and a reminder to step away and into a timeless sense of being and the complete abandon and decadence of the joy of age-old heritage and slow luxury. The store is an homage to the multi-cultural heritage of India, of the cross-cultural exchanges that have played out over the centuries, of Sabyasachi’s Calcutta and of the grand inheritance of luxury that belongs to India.

Developing nations focus of Mumbai G20 meet

India will also focus on accelerating progress in achieving the sustainable development goals (SDGs) by raising the profile of development issues across the G20’s working streams…reports Asian Lite News

As India prepares for a meeting under its G20 presidency that will be crucial to securing the interests of developing countries, officials are taking heart from the country’s ability to act as a bridge at a time of divisions within the grouping of the world’s largest economies.

The first meeting of the development working group, to be held in Mumbai from December 13-16, will be used by India to bring to the fore issues that are relevant to developing countries.

The group is part of the G20’s sherpa track and was one of the first working groups to be created in 2010. It has also been behind some notable deliverables over the years.

As officials prepare for the upcoming meeting, they have been buoyed by the fact that despite geopolitical tensions, all sherpas and heads of delegations, including those of the G7, Russia and China, participated in person at all the meetings and side events held in Udaipur as part of the first sherpas meeting held from December 4-7.

After months of deadlock during Indonesia’s G20 presidency, a joint communique was adopted at the G20 Summit in Bali last month, but differences still remained, the people noted.

Keeping with the Indian leadership’s pledge to act as a voice for the developing nations at the G20, the country will call for an enhanced role for the Global South in global decision-making during the development working group’s discussions.

During India’s G20 presidency, the development working group will highlight the need to increase the profile of developing nations in international bodies as part of reformed multilateralism to address contemporary challenges, the people added.

India will also focus on accelerating progress in achieving the sustainable development goals (SDGs) by raising the profile of development issues across the G20’s working streams. Financing is key to achieving the 2030 agenda for sustainable development and developing countries face many bottlenecks in this area.

The Covid-19 pandemic severely hampered efforts by countries to meet SDG targets by 2030 by restricting fiscal space, and the SDG financing gap in developing countries is estimated to have increased by 20%.

The development working group has overseen the G20’s development agenda since its inception in 2010. It has also steered the alignment of this development agenda with the SDGs. Besides working on energy and food security, climate change and global health emergencies, the group has dealt with issues such as quality infrastructure and financing for sustainable development.

‘Putin likely to participation in 2023 G20 Summit’

Russian President Vladimir Putin is likely to participate in the G20 Summit in New Delhi in September 2023, Russia’s G20 (Sherpa) Svetlana Lukash has stated.

“I hope that, of course, [Russia’s president] will go [to the G20 Summit]. But this, in any case, is up to him to decide. Now, when the next summit is one year ahead, I cannot give an answer to such a question. The way I see it, that there are all chances for this,” Lukash told Russian state news agency TASS on Friday. Lukash recalled that the meeting of the G20 leaders in New Delhi, as the Indian organizers had announced, was scheduled for September 9-10, 2023.

Lukash said that she is hopeful that the Russian President will attend the Summit next year, however, it is up to him to take the final call, she added.

The Russian G20 Sherpa said that she is hopeful that her country nation won’t miss a single event and emphasised the significance of Russia’s attendance in order to take a stand and express its opinions.

“I hope that we will not miss a single event – be it a meeting of a working group or a seminar, or a conference. It is important for Russia to participate in any event to demonstrate its position, express its views, and see the best practices that partners from other countries have,” Lukash was quoted as saying by TASS.

The first G20 Sherpa meeting under India’s Presidency kicked off in Udaipur on December 5 where Lukash said that digital transformation and innovations are key drivers of growth and development. She further said, “Hence proposed by #G20India as cross-cutting topics at all the G20 working tracks.”

During the G20 Sherpa meeting held in Udaipur, Russian G20 Sherpa Svetlana Lukash lauded India and Indian Sherpa Amitabh Kant for putting ‘Women-led development’ as one of the group’s key priorities.

Taking to Twitter, Lukash said, “Grateful to #G20India and @amitabhk87 for putting ‘Women-led development’ as one of the key priorities of G20. Women are catalysers of positive transformations!”

In a series of tweets, Lukash said, “So inspired by meeting with highly professional and charming experts of #G20India Team! G20 is destined to succeed with their committed hearts and creative minds!”
